What is a Paloma?

The Paloma is one of Mexico’s most popular cocktails. While the Margarita often gets most of the attention, many people in Mexico reach for a Paloma thanks to its bright citrus flavor and refreshing finish.

Traditionally, a Paloma combines tequila with grapefruit soda, lime, and salt. This homemade version uses freshly squeezed grapefruit juice, fresh lime juice, agave syrup, sparkling water, and your choice of tequila or mezcal. The result is a fresher, brighter cocktail with a vibrant citrus flavor that lets the fresh fruit shine.

If you enjoy drinks that aren’t overly sweet, the Paloma is an excellent choice.

Key Ingredients

NOTE: This section highlights ingredients used in the recipe. Find the full printable recipe in the recipe card below.

Ruby red grapefruit

Fresh grapefruit juice is the star of this recipe. Ruby red grapefruit offers the perfect balance of sweetness and tartness while adding a beautiful blush color to the finished drink.

Limes

Fresh lime juice brightens the cocktail and balances the sweetness of the grapefruit and agave.

Agave syrup

Agave syrup blends smoothly into cold drinks and adds just enough sweetness without overpowering the fresh citrus flavors.

Tequila or mezcal

A blanco (white) tequila gives the cocktail a clean, crisp flavor, while mezcal adds a subtle smoky finish that’s equally delicious.

Sparkling water

Sparkling water lightens the drink and adds refreshing bubbles without making it overly sweet.

Ice

Plenty of ice keeps the cocktail cold and refreshing.

Grapefruit wedges

A fresh grapefruit wedge makes a simple yet beautiful garnish.

Ingredients & Substitutions

NOTE: This section suggests substitutions. Find the full printable recipe in the recipe card below.

  • Ruby red grapefruit – Fresh grapefruit juice provides the brightest flavor. Pink grapefruit also works well.
  • Limes – Fresh lime juice is strongly recommended over bottled.
  • Agave syrup – Honey or simple syrup may be substituted, although each will slightly change the flavor.
  • Blanco tequila – Produces the classic clean, crisp Paloma flavor.
  • Mezcal – A great alternative if you enjoy a subtle smoky finish.
  • Sparkling water – Club soda or plain mineral water both work well. Ice – Keeps the cocktail perfectly chilled.
  • Grapefruit wedges – Optional, but they make an attractive garnish.

Variations

  • Use mezcal – Swap the tequila for mezcal if you enjoy a subtle smoky flavor.
  • Make it sweeter – For a sweeter variation, replace the agave syrup and sparkling water with 6 ounces of grapefruit soda, such as Squirt, Fresca, or grapefruit-flavored Jarritos.
  • Add a salted rim – A salted rim adds wonderful contrast to the fresh citrus. Maldon sea salt flakes create a delicate salty finish, while Tajín adds a tangy, mildly spicy kick.
  • Make it spicy – Add a few slices of fresh jalapeño while mixing the drink for gentle heat.
  • Make a pitcher – Multiply the ingredients to serve a crowd. Wait to add the sparkling water until just before serving so it stays bubbly.

Tips for Best Results

  • Use freshly squeezed grapefruit and lime juice for the brightest flavor.
  • Chill your glasses ahead of time for an extra refreshing cocktail.
  • Stir the tequila with ice before straining to properly chill the drink.
  • Taste before serving. If your grapefruit is especially tart, add a little more agave syrup.
  • Add the sparkling water last to preserve the bubbles.
  • Garnish with a fresh grapefruit wedge for the best presentation.
  • Use quality tequila or mezcal since there are only a handful of ingredients.

FAQs

Can I make any substitutions?

Yes! For a sweeter, more traditional Paloma, replace the agave syrup and sparkling water with 6 ounces of grapefruit soda. Squirt, Fresca, and grapefruit-flavored Jarritos are all great options. Each will create a slightly different flavor profile, but they’ll all make a delicious Paloma.

Can I use bottled grapefruit juice?

Freshly squeezed grapefruit juice provides the best flavor and gives the cocktail its bright, fresh taste. Bottled juice can be used in a pinch, but it often lacks the same freshness.

What’s the difference between tequila and mezcal?

Both spirits are made from agave, but mezcal is traditionally roasted before distillation, giving it a distinct smoky flavor. Blanco tequila creates a lighter, cleaner cocktail, while mezcal adds extra depth.

If I want to try a salt rim, what salt do you recommend?

Maldon sea salt flakes are an excellent choice because their large, delicate flakes provide a pleasant crunch without overwhelming the drink. If you like a little heat, Tajín seasoning creates a tangy, slightly spicy rim that’s especially delicious with grapefruit.

How do I achieve the perfect salted rim?

Pour about ¼ inch of Maldon sea salt flakes onto a small saucer. Rub a lime wedge lightly around only the outside edge of the glass. Turn the glass upside down into the salt and gently rotate until the rim is evenly coated. Avoid getting too much juice on the glass so the salt stays neatly on the rim.

Can I make this into a mocktail?

Absolutely. Simply omit the tequila or mezcal and replace it with additional sparkling water or grapefruit-flavored sparkling water. You’ll still enjoy a refreshing citrus drink with plenty of flavor.

Can I make a large batch for a party?

Yes. Multiply the grapefruit juice, lime juice, agave syrup, and tequila as needed and refrigerate the mixture. When it’s time to serve, pour over ice and top each glass with sparkling water so every drink stays fizzy.

Why does my Paloma taste bitter?

Grapefruit naturally varies in sweetness. If your grapefruit is especially tart or bitter, stir in a little more agave syrup or add the pinch of salt mentioned in the recipe notes. Both help balance the citrus flavors naturally.

Storage

This cocktail is best enjoyed immediately after mixing.

If you have leftover juice mixture before adding sparkling water or ice, refrigerate it in an airtight container for up to 24 hours. Add fresh ice and sparkling water just before serving.
