Ingredients 

  • ½ pound ground breakfast sausage
  • 2 tablespoons unsalted butter, softened
  • 6 large eggs, beaten
  • 2 tablespoons unsalted butter, softened
  • 8 slices sourdough bread
  • 8 slices Colby-Jack cheese

Instructions 

  • In a large non-stick skillet, cook and crumble the sausage over medium heat until no longer pink. Transfer the sausage to a paper towel-lined bowl. Wipe out the skillet.
    ½ pound ground breakfast sausage
  • Melt 2 tablespoons butter in the skillet over medium-high heat. Add the eggs and cook, gently stirring, until softly scrambled and almost fully set. Remove from the heat.
    2 tablespoons unsalted butter, 6 large eggs
  • Remove the paper towel from the sausage bowl. Add the scrambled eggs and stir gently to combine.
  • Heat the skillet over medium heat. Butter one side of each slice of bread.
    2 tablespoons unsalted butter, 8 slices sourdough bread
  • Place one slice of bread into the skillet, butter side down. Top with one slice of cheese.
    8 slices Colby-Jack cheese
  • Add about ½ cup sausage-egg mixture over the cheese. Top with another slice of cheese and another slice of bread with the buttered side facing up.
  • Cook for 3-4 minutes or until golden brown. Carefully flip and cook the second side until golden brown and the cheese is melted.
  • Remove from the skillet and cut in half if desired.
  • Repeat with the remaining ingredients.
  • Serve immediately.

    This recipe sounded so good that I combined it with elements of a Korean Toastu. I sprinkled about 1/2 tsp sugar over the egg mixture (after it is on the bread ), added some ketchup and then added shredded angel hair coleslaw (such a satisfying crunch!). The thing I like least about a toastu sandwich is that it is not grilled enough. The combination with yours was perfect! Thanks so much for sharing.

    I haven’t tried this, but I suggest after cooking the sausage, leave it in the pan, add the eggs, & scramble the eggs with the sausage. I grew up eating scrambled eggs & sausage this way & still cook it this way. Some people call this mixture “hobo”. It’s less trouble (fewer steps) & I believe that the eggs & sausage will stay combined better in the sandwich this way than if they are cooked separately. That’s the only change I would make to your recipe…it sounds delicious!
