In a large non-stick skillet, cook and crumble the sausage over medium heat until no longer pink. Transfer the sausage to a paper towel-lined bowl. Wipe out the skillet.

Melt 2 tablespoons butter in the skillet over medium-high heat. Add the eggs and cook, gently stirring, until softly scrambled and almost fully set. Remove from the heat.

Remove the paper towel from the sausage bowl. Add the scrambled eggs and stir gently to combine.
Heat the skillet over medium heat. Butter one side of each slice of bread.
Place one slice of bread into the skillet, butter side down. Top with one slice of cheese.

Add about ½ cup sausage-egg mixture over the cheese. Top with another slice of cheese and another slice of bread with the buttered side facing up.
Cook for 3-4 minutes or until golden brown. Carefully flip and cook the second side until golden brown and the cheese is melted.
Remove from the skillet and cut in half if desired.
Repeat with the remaining ingredients.
Serve immediately.
