Bean Tostadas

I’ve been in one of “those” moods lately ….. ya know the kind where you eat Mexican food for every meal for days on end?! We have eaten a lot of it recently. No one at my house is complaining either. We love it! 🙂  

This dish is nice for those times when you want a quick, easy, tasty and budget-friendly dish. Seriously, what more could you ask for?! Start to finish is probably 15 minutes – 20 minutes max! And – you can customize each bean tostada for every family member! Someone doesn’t like tomatoes? Leave them off. Ya like extra cheese? Add a handful! I’m telling ya, it’s a win-win-win situation!

If you want to make it even easier on yourself, buy the already made tostada shells! (My local store sells them on the ethnic foods aisle and in the bread department next to the tortillas).

Bean Tostadas

Ingredients 

  • 10 corn tortillas
  • Oil, for frying
  • 1 can refried beans, 28-30 oz.

Choose your favorite toppings

  • Shredded lettuce
  • Shredded Cheddar Cheese
  • Chopped tomatoes
  • Chopped red onion
  • Black olives
  • Sour Cream
  • Guacamole
  • Limes wedges
  • Taco sauce or salsa

Instructions 

  • In a medium skillet, heat about ½-inch of oil over medium-high heat. When the oil is hot, add a tortilla – cook one at a time – and fry until crisp and golden, flipping once. Remove to a paper towel lined plate to drain.
  • Meanwhile, heat the beans in a medium saucepan over medium-low heat until heated through, stirring occasionally until hot.
  • To serve – spoon beans onto the tortilla and spread around. Top with your choice of toppings.
