Pumpkin Pie Oatmeal

Truth is, I’m not a breakfast eater. My family on the other hand, loves it! Breakfast for breakfast, breakfast for lunch or breakfast for dinner – they don’t care! Not only am I not a breakfast fan, but I am especially not a fan of oatmeal.

Sorry, I just don’t like it. It’s a texture thing. Don’t get me wrong – I like it in cookies – just not like “oatmeal.” My kiddos wanted to have breakfast for dinner the other night ….. and I really did not feel like having pancakes or waffles …. so I decided to make this Pumpkin Pie Oatmeal. ‘Tis the season, right?!

I was actually surprised at how much I enjoyed this – the flavor anyways, not so much the texture. LOL. I’m still working on that part! I know oatmeal is good for you (and maybe it’s good for me – notice how I did that?!) and I probably should consider adding more of it to my breakfast routine – instead of my normal toast and coffee.

I even thought about drizzling some maple syrup on this to make it mo’ betta! Hindsight is 20/20 … maybe next time! The kids absolutely loved this and wanted it again for breakfast the next day ….. they are so deprived, can’t ya tell?

We had this with sausage links and fresh fruit on the side …. it made for an especially economical meal that was fairly healthy for us!

Pumpkin Pie Oatmeal

My kiddos wanted to have breakfast for dinner the other night ….. and I really did not feel like having pancakes or waffles …. so I decided to make this Pumpkin Pie Oatmeal. ‘Tis the season, right?!
Prep: 15 minutes
Cook: 15 minutes
Total: 30 minutes

Ingredients 

  • 1 cup water
  • 1 cup milk
  • 1 cup old-fashioned oats
  • ½ cup canned pumpkin
  • ½ – 1 teaspoon pumpkin pie spice
  • 2 tablespoons brown sugar
  • ½ teaspoon vanilla extract
  • Cinnamon, optional
  • Pecans, optional
  • Milk, optional
  • Maple syrup, optional

Instructions 

  • In a medium saucepan, combine the water, milk, oats, pumpkin and pumpkin pie spice. Bring to a boil. Cook and stir for 5 minutes.
  • Remove from the heat and add the brown sugar and vanilla. Sprinkle with cinnamon and pecans, if desired.
  • Serve with additional milk and maple syrup, if desired.

Notes

  • These cooking instructions are for rolled/old-fashioned oats. Do not use them for quick oats or you will have mush!

    I love oatmeal but half of the family doesn't, I bet they'd love this. My lot love "brinner" Samuel wanted that for his birthday but I was not serving guests breakfast for dinner and told him we'd do it the following weekend

    Jamie, you're so cute! You crack me up every time you have a breakfast post. What a good mom to give the kids what they want. 🙂 I always eat my oatmeal with maple syrup, toasted pecans and brown sugar. Maybe a little almond milk if it's too thick. Have you tried Steel Cut Oats? You have to chew them, and they take forever to cook, but they have a completely different texture that you might enjoy. 🙂 I am on mushy foods for a couple of days, so this oatmeal will be perfect!!
