This Lemon Lush Delight is a cool, creamy, lemony dessert that’s sure to be a new favorite! It’s perfect any time you want a sunny citrus treat!

Lemon Lush Delight

If you’re as big of a fan when it comes to lemon desserts as I am, then you are going to LOVE this Lemon Lush Delight! It is always a hit when we serve it to guests and I’m almost always asked for the recipe …. and today, I’m more than happy to share it with all of you!

Ingredients to make the lemon pie.

Although it may sound a bit like an untraditional combination of flavors, let me assure you that it all pulls together so perfectly. This Lemon Lush Delight starts with a nutty shortbread-like crust. It’s then topped with a no-bake cheesecake-like layer. A luscious lemony layer comes next, and finally a creamy whipped topping layer with pecans.

This Lemon Lush Delight is the perfect treat whenever you crave a sunny, citrusy dessert! It all comes together so quickly … the hardest part will be waiting long enough before you can dig in!

Lemon Lush Dessert recipe

For the crust:

  • all-purpose flour
  • chopped pecans
  • butter

Cheese layer:

  • cream cheese
  • powdered sugar
  • frozen whipped topping

Lemon layer:

  • lemon instant pudding
  • milk

Topping:

  • frozen whipped topping
  • chopped pecans, if desired

How to make Lemon Lush

  1. Preheat oven to 375°F.
  2. Combine flour, pecans, and butter in a bowl until the mixture becomes coarse crumbs. Press into a 9×13-in. baking pan.
  3. Bake in a preheated oven for 15 minutes or until very lightly golden around the edges. Remove from oven and let cool completely.
  4. In a medium mixing bowl, beat cream cheese with an electric beater until fluffy. Add in powdered sugar and beat until light and fluffy (about 3 minutes). Fold in 1 cup of whipped topping and spread the mixture on top of the cooled crust.
  5. In a separate medium bowl, whisk pudding and milk until smooth and no lumps remain. Pour the lemon mixture on top of the cheese layer. Refrigerate until pudding is firm (about 30 minutes).
  6. Spread remaining whipped topping over the pudding layer and top with additional pecans, if desired.
  7. Let chill overnight and serve.

Ingredients 

For the crust:

  • 1 cup all-purpose flour
  • ½ cup chopped pecans
  • 1 stick butter, softened

Cheese layer:

  • 1 package cream cheese, softened, 8 oz
  • 1 cup powdered sugar
  • 1 cup frozen whipped topping from an 8 oz container, thawed

Lemon layer:

  • 2 packages lemon instant pudding, 3.4 oz each
  • 2 ⅔ cups milk

Topping:

  • 1 container frozen whipped topping, divided, 8 oz (1 cup is used in the cheese layer)
  • Additional chopped pecans, if desired

Instructions 

  • Preheat oven to 375°F.
