Breakfast Quesadillas
If you or your family is as crazy about breakfast as mine, this is a recipe they’ll love: breakfast quesadillas! With just four ingredients, they’re effortless to make and VERY filling, which is a huge “plus” if you have a busy household.
I’m already thinking of back-to-school this fall … it can be such an exciting time, but it can also bring a lot of chaos. Many families (mine included) take the summer “off.” We relax. We go on vacation. We go to cookouts, or we have picnics. All in all, schedules tend to go away since we don’t have as many things to tie up our time. For the most part, we enjoy the season and have fun.
When that school bell rings; however, those lazy days of summer seem to be long forgotten and are quickly replaced with full schedules and crazy days. It seems many families are busy running from this activity to the next. And what do we all end up sacrificing? Dinner. No judgment, though! Many times in my household, dinner during the school year means hitting the drive-thru or picking up the phone for delivery. Although there’s nothing wrong with take-out, it’s not necessarily what we want to do. Time, however, is always the issue, and we want something easy.
Bacon Egg Cheese Quesadilla
Thankfully, some of my family’s favorite meals are quick and easy! I have a few recipes that I always keep in mind. Some of our favorites are omelets, scrambles, and quesadillas. I usually have ingredients to make these kinds of dishes … and by using ingredients you typically keep on hand, you can save time during the school year. (Or any other busy season, honestly!) So that’s why these breakfast quesadillas make a wonderful meal when you need something quick and easy … a few eggs, some tortillas, slices of bacon, and some cheese, and you’re all set!
Recipe for Breakfast Quesadillas
- burrito-size flour tortillas
- bacon
- large eggs
- cheddar cheese, shredded
- Salsa and/or sour cream (optional)

How to make Breakfast Quesadillas
- In a skillet, cook the bacon to desired crispness. Remove the cooked bacon to paper towels to drain. Remove all but about 1 tbsp. of the bacon grease.
- Add the beaten eggs to the skillet. Cook and scramble the eggs until they are set and no longer runny. Remove the eggs from the heat.
- Crumble the bacon.
- Preheat a griddle over medium-high heat.
- Place a tortilla on the griddle. Spoon one-fourth of the eggs over half of the tortilla. Top with one-fourth of the bacon and one-fourth of the cheese. Fold the bare part of the tortilla over the top of the ingredients. Cook until the bottom begins to brown, then, carefully, flip the quesadilla over and continue to cook until the other side browns and the cheese is melted.
- Remove from the griddle to a cutting board. Slice into 3-4 wedges. Repeat with the remaining ingredients.
- Serve with salsa and/or sour cream, if desired.

- Gluten-free tortillas instead of flour ones make this an easy gluten-free meal!
- Corn tortillas are also good
- Literally any kind of cheese tastes wonderful in these, y’all
And some additions:
- Sausage – of any type! Precooked, of course!
- Beans – pinto or black are great options!
- Guacamole – use your favorite recipe!
- Onions – I prefer them cooked but raw might be your jam.
- Hot sauce – the possibilities are endless!
- Potatoes – any kind! (precooked, of course!)
