Ingredients 

  • 1 teaspoon olive oil
  • 1 pound ground Italian sausage
  • 2 teaspoons garlic, minced
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes
  • 6 cups chicken broth
  • 1 package refrigerated tortellini, (9 ounces), any variety
  • 3 cups fresh baby spinach, chopped
  • finely shredded Parmesan cheese, for topping

Instructions 

  • Heat the olive oil in a large stockpot over medium-high heat. Add the sausage and cook until browned, about 6 minutes.

  • Add the garlic, Italian seasoning, and red pepper flakes. Cook until fragrant, about 1 minute.
