It’s hard to believe that in just over a month, Christmas comes around yet again to bring good cheer and presents to all the good little boys and girls! But while it might be a little too early to start wrapping gifts, it’s never too early to start snacking on some yummy eggnog cupcakes like these.

Eggnog Cupcakes are, well, eggnog-flavored cupcakes. They’re delicious, moist, and so, SO easy to make, y’all. If you’ve ever baked before, you have this down pat, and if you haven’t, it’s a simple recipe anyone can follow. Easy-peasy.

When the big day comes, you can bake a batch and set them out with mugs of hot milk or hot cocoa. Or eggnog! Unless you find that overkill? Is there such a thing as too much eggnog in wintertime, really?! Ha!!

These egg nog cupcakes are the perfect way to celebrate the holidays. By using egg nog instead of milk, you will end up with a perfectly moist, soft cupcake. The spices from the egg nog pair perfectly with the cream cheese in the frosting to create a holiday treat you are sure to love.

Eggnog Cupcakes: Ingredients & Substitutions

For this Eggnog Cupcakes recipe, you will need …

Ingredients

For your cupcakes:

  • white flour, salt, baking powder, and granulated sugar – these are your dry ingredients for the cupcake batter. It’s all standard baking stuff!
  • butter, eggs, vanilla extract – these, on the other hand, are your wet ingredients. Again, nothing out of the ordinary here if you’ve made cupcakes before.
  • eggnog – here’s the only unusual ingredient in the whole recipe, and even then, considering its Eggnog Cupcakes, it shouldn’t seem TOO unusual!

For your eggnog frosting:

  • powdered sugar and cream cheese – these two ingredients provide the texture and consistency you want for your frosting.
  • eggnog – well, it wouldn’t be eggnog frosting without this!

How to make Eggnog Cupcakes

Whether you’re a master at making cupcakes or it’s your first time trying to put together baked goods on your own this holiday season, Eggnog Cupcakes are simple! Here’s what to do…

First, set up your supplies. Preheat the oven to 350F and line your cupcake tin, the usual!

Second, mix your wet ingredients. Grab a large bowl or stand mixer and cream (blend) your sugar and butter together. You want a light, smooth texture! After that, add your eggs and vanilla and continue blending/beating the mixture, then throw in your eggnog, as well.

Next, mix in your dry ingredients. Fold in your flour, baking powder, and salt until there are no clumps in the batter. Scrape the bottom of the bowl, too, to make sure nothing’s stuck at the bottom!

Then, bake those eggnog cupcakes! Fill each liner in your tin up to the top with batter. Bake the cupcakes for 20 minutes or until the cupcakes pass the “toothpick test.”

Finally, frost those cupcakes and enjoy. You can make your eggnog frosting by whipping together the listed ingredients (cream cheese, eggnog, and powdered sugar) until they’re nice and smooth. Real simple!! Then just pipe the frosting onto each cupcake and scarf ‘em down!

Ingredients 

For the cupcakes

  • ¾ cup granulated sugar
  • ¾ cup unsalted butter, softened
  • 2 large eggs, cold
  • 1 ½ teaspoons vanilla extract
  • cup eggnog
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • 1 teaspoon salt

For the eggnog frosting

  • 1 package cream cheese, softened, 8 oz.
  • 4 tablespoons eggnog
  • 2 cups powdered sugar

Instructions 

  • Preheat your oven to 350°F. Line a muffin/cupcake pan with paper liners and set aside.
  • In a large bowl with a hand mixer or using a stand mixer, cream together your sugar and butter until smooth. Once smooth, add your eggs and vanilla and beat together until the ingredients are well combined.
  • Add in your eggnog and beat again until the mixture is smooth and creamy.
  • Fold in the flour, baking powder, and salt until no clumps of dry ingredients remain. Be sure to scrape the bottom of your bowl to make sure no flour has stuck to the bottom.
  • Fill each liner up to the top with batter.
  • Bake your cupcakes for 20 minutes or until a toothpick inserted near the center tests clean.
  • Allow your cupcakes to cool while you prepare your frosting. To prepare the frosting, whip together your cream cheese, eggnog, and powdered sugar until smooth.
  • Pipe frosting onto each cupcake,
  • Serve, and enjoy!
