- 2 tablespoons butter
- 1 small onion, chopped
- 1 carrot, peeled and chopped
- 1 stalk celery, chopped
- ¼ cup all-purpose flour
- 1 carton chicken broth, (32 oz. )
- 5 – 6 medium potatoes, cubed
- 2 cups milk, or half & half
- 6 ounces Cheddar cheese, shredded
- Extra shredded cheese and chopped green onions, optional, for topping
Instructions
- In a large soup pot, heat the oil and cook the kielbasa until browned and heated through. Transfer to a paper towel-lined plate to drain.1 tablespoon vegetable oil, 1 package Kielbasa sausage
