What are Turtle Cookies?

Turtle Cookies are inspired by the classic turtle candies made with chocolate, caramel, and pecans. This easy version combines all three flavors into a soft chocolate cookie that’s rolled in chopped pecans before baking and finished with a warm caramel drizzle.

Using a chocolate chip cookie mix keeps the recipe simple without sacrificing flavor, making these cookies perfect when you want homemade treats with less work.

Ingredients & Substitutions

NOTE: This section suggests substitutions. Find the full printable recipe in the recipe card below.

  • The shortcut that makes this recipe quick and easy.
  • Sugar cookie mix can be substituted. Add about 1 cup of chocolate chips for a similar flavor.

Cocoa powder

  • Gives the cookies a rich chocolate flavor.
  • Dutch-process cocoa creates a darker, richer cookie.

Salted butter

  • Adds richness and flavor.
  • Unsalted butter works just as well. Add a pinch of salt if desired.

Large egg

  • Helps bind the dough together.
  • Use room temperature for best mixing.

Heavy cream

  • Used in both the cookie dough and caramel drizzle.
  • Milk or water can be substituted, although the caramel may not be quite as rich.

Chopped pecans

  • Classic turtle candy flavor and crunch.
  • Chopped walnuts or almonds are excellent substitutes.
  • Omit for a nut-free version.

Caramel bits

  • Melt easily for a smooth drizzle.
  • Soft caramel candies may also be used.

Variations

  • Add chocolate chips – Fold semisweet, milk chocolate, or dark chocolate chips into the dough for even more chocolate.
  • Try different nuts – Swap the pecans for chopped walnuts or almonds for a different flavor and texture.
  • Skip the nuts – Leave out the pecans if you need a nut-free version. The cookies will still be soft and delicious.
  • Change the drizzle – Instead of caramel, drizzle the cookies with melted chocolate or a simple powdered sugar glaze.
  • Make them festive – Top the caramel drizzle with holiday sprinkles, flaky sea salt, or crushed toffee bits before it sets.

Tips for Best Results

  • Let the butter soften before mixing so the dough comes together easily.
  • Don’t overmix the dough once everything is combined.
  • Roll the cookies gently in the pecans so they stick without pressing them into the dough.
  • Bake just until the edges are set for the softest cookies.
  • Let the cookies cool before adding the caramel so it stays on top instead of soaking into the cookies.
  • Heat the caramel in short intervals and stir often to prevent scorching.
  • If the caramel becomes too thick, stir in a teaspoon of heavy cream until it reaches a drizzling consistency.

FAQs

Can I use a different cookie mix?

Yes. A sugar cookie mix works well if you stir about 1 cup of chocolate chips into the dough. Other cookie mixes can also be used, although the flavor and texture will vary slightly.

Can I use Dutch-process cocoa powder?

Absolutely. Dutch-process cocoa gives the cookies a darker color and a richer chocolate flavor than regular cocoa powder.

Can I use homemade caramel instead of caramel bits?

Yes. Homemade caramel sauce works well as long as it’s thick enough to drizzle without running completely off the cookies.

What if my caramel is too thick?

Add heavy cream a teaspoon at a time until the caramel reaches your desired consistency.

Can I make these without nuts?

Yes. Simply skip the pecans if needed. The cookies will still have plenty of chocolate and caramel flavor, although they’ll lose the classic turtle candy crunch.

Why did my cookies spread too much?

Butter that is overly soft or warm can cause cookies to spread. If your dough feels very soft, refrigerate it for 20 to 30 minutes before baking.

Can I freeze Turtle Cookies?

Yes. Once the caramel has completely set, layer the cookies between sheets of parchment paper in a freezer-safe container and freeze for up to 3 months. Thaw before serving.

Storage

Store Turtle Cookies in an airtight container at room temperature for 2 to 3 days.

For longer storage, refrigerate them for up to 1 week. Place parchment paper between the layers to help prevent the caramel from sticking.

For even longer storage, freeze the cookies for up to 3 months. Thaw overnight in the refrigerator or at room temperature before serving.

Quick Steps

NOTE: This section includes a step-by-step guide. Find the full printable recipe in the recipe card below.

  1. Preheat the oven and prepare your baking sheets.
  2. Mix together the cookie mix, cocoa powder, butter, egg, and heavy cream until a soft dough forms.
  3. Fold chopped pecans into the dough.
  4. Scoop the dough into balls and roll each one in chopped pecans.
  5. Bake until the edges are set, and the tops begin to crack.
  6. Cool the cookies while melting the caramel.
  7. Drizzle warm caramel over the cooled cookies.
  8. Serve immediately or allow the caramel to set before storing.

Make Ahead

These cookies are perfect for preparing ahead of time.

The cookie dough can be made and refrigerated for up to 24 hours before baking. You can also freeze the unbaked dough balls for up to 3 months. Bake straight from frozen, adding an extra minute or two to the baking time if needed.

The baked cookies can also be made a day or two ahead and drizzled with caramel before serving or after thawing.

What to serve with Turtle Cookies

These rich chocolate cookies pair well with plenty of sweet treats and beverages.
