As you may recall, I mentioned that I haven't really been posting too much lately because I got really, really sick and it seemed to take forever to get better. Aside from a little bit of a cough, I feel mostly better and that's a good thing considering I have a trip to Las Vegas later this week!
When I planned out our meals for this week, the ones I would cook before I leave and the ones Brian will have to cook while I'm gone, I figured this was one of those weeks where easy needed to be the name of the game! Between getting everything ready for my trip and making sure my kiddos and husband will survive a few days without me, I just don't want to stress about dinner!
As someone who could eat Mexican, Tex-Mex or Southwest-inspired food 365 days out of the year, I was kind of craving Burrito Bowls .... you know, like the kind you get at that famous restaurant? The problem was, I wasn't really feeling up to making everything myself!
For those crazy nights when I need a shortcut, I turn to Del Real Foods products! You can find the various Del Real Foods products at your local store. I love the delicious and authentic taste - and even brian has mentioned how much our house smells like a Mexican restaurant anytime I use Del Real Foods products!
Of course, if chicken isn't your thing, you can use Del Real Foods Barbacoa, Del Real Foods Shredded Beef, or Del Real Carnitas! I love the Ranchero Beans, but feel free to use Del Real Foods Frijoles Negros if you prefer black beans! Homemade Burrito Bowlsby
Prep Time: 10 minutes
Cook Time: 20 minutes
Yield: 5 servings
1. Prepare Del Real Foods Ranchero Beans and Del Real Foods Pollo Asada according to package directions. Chop the chicken and set aside.
2. For each serving, layer ingredients in the following order: Cilantro Lime Rice, Del Real Foods Ranchero Beans, Del Real Foods Pollo Asada, Corn Salsa, Shredded Mexican Cheese, and Homemade Guacamole.
3. If desired, top each serving with sour cream and salsa. Serve immediately.
