Equipment

Ingredients 

  • 2 cups cold milk
  • 1 box instant pistachio pudding mix, (3.4 oz.)
  • ¾ cup heavy cream
  • 4 oz. cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • green food coloring, optional
  • ¾ cup shelled pistachios, finely chopped, divided
  • 1 premade graham cracker crust, (9-inch)
  • whipped cream and maraschino cherries, for garnish (optional)

Instructions 

  • In a large mixing bowl, whisk together the cold milk and pistachio pudding mix until thickened. Set aside.
    2 cups cold milk, 1 box instant pistachio pudding mix
  • In a separate bowl, beat the heavy cream until stiff peaks form. Set aside.
    ¾ cup heavy cream
  • In another bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, and beat until combined.
    4 oz. cream cheese, ½ cup powdered sugar, 1 teaspoon vanilla extract
  • Fold the pudding mixture into the cream cheese mixture.
  • Gently fold in the whipped cream. Add food coloring if desired.

  • Stir in ½ cup chopped pistachios, reserving the remaining ¼ cup for garnish.

  • Spread the filling evenly into the crust and smooth the top.
