Ingredients 

  • 1 tablespoon butter
  • 1 cup celery, finely diced
  • 1 cup carrots, finely diced
  • 1 cup red onion, finely diced
  • 3 cloves garlic , minced
  • 1 lb ground chicken
  • ½ cup Frank’s hot sauce
  • 1 can diced tomatoes, with juice, 14 oz.
  • 1 cup blue cheese crumbles
  • Chives and Ranch dressing, for serving (optional)
  • brioche rolls, for serving

Instructions 

  • In a large non-stick skillet, melt the butter over medium heat. Add the celery, carrot, and onion. Sautee for 8-10 minutes until soft. Add in the minced garlic and cook for 30 seconds until fragrant.
  • Add in the ground chicken and turn the heat up to medium-high. Brown the chicken until fully cooked through, breaking it up as you go.
  • Add in the hot sauce and diced tomatoes and mix well. Turn the heat down to medium-low and simmer until the sauce has reduced and thickened, about 15 minutes, stirring occasionally. If it looks too dry, try adding some chicken stock. If it is still too saucy, keep reducing, stirring occasionally.
  • Serve the sloppy joe mixture on brioche rolls, topped with the blue cheese crumbles, and drizzle with ranch dressing if desired. Sprinkle on chives for garnish. Enjoy!

  • Tomato Sauce can be used in place of the diced tomatoes.
