Instant Pot Corn on the Cob

Don’t you love summer produce? Mmmmm! ? I absolutely love driving by the local farms and seeing all of the produce in the fields or visiting the farmer’s market to buy the freshest and best produce available locally!

This year we did CSA boxes through one of our local farms, and corn is just about to come into season here in Eastern North Carolina! To say that I am excited is an understatement – I look forward to it every. Single. Year!! With all of the berries, greens, potatoes, tomatoes, cucumbers, onions – I enjoy seeing ears of corn in my produce box or at the farm stand!! And the melons …. but that is a whole other post!

What I love most about this Instant Pot Corn on the Cob recipe is how easy it is to make and that I can practically ignore it while it does its thing, leaving me plenty of time to focus on the other parts of the meal. It’s always a favorite recipe at our cookouts and when we go camping. I sure hope you enjoy the recipe, too!
