Ingredients
1tablespoonbutter
1cupceleryfinely diced
1cupcarrotsfinely diced
1cupred onionfinely diced
3clovesgarlic minced
1lbground chicken
½cupFrank's hot sauce
1candiced tomatoes, with juice14 oz.
1cupblue cheese crumbles
Chives and Ranch dressingfor serving (optional)
brioche rollsfor serving
Instructions
In a large non-stick skillet, melt the butter over medium heat. Add the celery, carrot, and onion. Sautee for 8-10 minutes until soft. Add in the minced garlic and cook for 30 seconds until fragrant.
Add in the ground chicken and turn the heat up to medium-high. Brown the chicken until fully cooked through, breaking it up as you go.
Add in the hot sauce and diced tomatoes and mix well. Turn the heat down to medium-low and simmer until the sauce has reduced and thickened, about 15 minutes, stirring occasionally. If it looks too dry, try adding some chicken stock. If it is still too saucy, keep reducing, stirring occasionally.
Serve the sloppy joe mixture on brioche rolls, topped with the blue cheese crumbles, and drizzle with ranch dressing if desired. Sprinkle on chives for garnish. Enjoy!
Notes
Tomato Sauce can be used in place of the diced tomatoes.
Kick it up a notch by adding crushed red pepper or cayenne pepper. For a less spicy version, add less hot sauce. Or, you can add more tomato sauce.
Top with blue cheese crumbles, mozzarella, ranch dressing, blue cheese dressing, crispy onions (such as French’s crispy onions), chives, and scallions.
Store any leftovers in an airtight container for up to 3 days in the refrigerator. Reheat in the microwave or on the stovetop in a non-stick skillet.
