Ingredients 

For the waffles

  • 2 cups rolled oats
  • ¼ cup all-purpose flour
  • 2 large bananas
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon sea salt
  • spray cooking oil, for cooking
  • sweetened whipped cream, for topping

For the blueberry sauce

  • 2 cups frozen blueberries
  • 2 tablespoons agave syrup
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch mixed with 1 tablespoon hot water

For the cobbler crumble

  • ¼ cup + 1 tablespoons rolled oats
  • 4 tablespoons unsalted butter, softened
  • 3 tablespoons all-purpose flour
  • cup brown sugar
  • ¼ teaspoon ground cinnamon
  • pinch sea salt

Instructions 

  • Preheat the oven to 400*F.
  • Add the oats, banana, almond milk, baking powder, cinnamon, and salt to a blender and blend until smooth. Set aside.
  • In a medium bowl, combine the crumble ingredients until well combined and it resembles sand. Spread onto a parchment-lined baking sheet and bake for 5-7 minutes or until golden brown and crunchy. Remove from oven and set aside to cool.
  • In a large saucepan, combine the blueberry sauce ingredients. Bring to a simmer and cook for 5-7 minutes or until thickened and glossy. Set aside to cool slightly or keep warm over low heat until ready to serve.
  • Spray your waffle iron with cooking spray. Once preheated, add the appropriate amount of the waffle batter to your waffle iron and cook for 4-5 minutes or until the steam coming out the sides reduces. Remove the waffle from the iron when it is golden and crispy on the outside. Repeat with the remaining batter.
  • To serve, top the waffles with whipped cream, the blueberry sauce, and the crumble.
