For the cobbler crumble
¼cup+ 1 tablespoons rolled oats
4tablespoonsunsalted buttersoftened

⅓cupbrown sugar

Instructions
Preheat the oven to 400*F.
Add the oats, banana, almond milk, baking powder, cinnamon, and salt to a blender and blend until smooth. Set aside.
In a medium bowl, combine the crumble ingredients until well combined and it resembles sand. Spread onto a parchment-lined baking sheet and bake for 5-7 minutes or until golden brown and crunchy. Remove from oven and set aside to cool.
In a large saucepan, combine the blueberry sauce ingredients. Bring to a simmer and cook for 5-7 minutes or until thickened and glossy. Set aside to cool slightly or keep warm over low heat until ready to serve.
Spray your waffle iron with cooking spray. Once preheated, add the appropriate amount of the waffle batter to your waffle iron and cook for 4-5 minutes or until the steam coming out the sides reduces. Remove the waffle from the iron when it is golden and crispy on the outside. Repeat with the remaining batter.
To serve, top the waffles with whipped cream, the blueberry sauce, and the crumble.
Notes
