Ingredients 

Chicken

  • 1 pound chicken breasts, cut into 2-inch bite-sized pieces
  • 1 teaspoon kosher salt
  • 2 garlic cloves, minced
  • ½ teaspoon ginger, minced or grated
  • 1 cup cornstarch
  • olive oil cooking spray

Sauce

  • 1 tablespoon sesame oil
  • ¼ cup reduced sodium soy sauce
  • ¼ cup brown sugar, packed
  • 2 tablespoons distilled vinegar
  • ½ cup ketchup
  • cup water
  • 1 tablespoon cornstarch
  • 2 teaspoons sesame seeds, for garnish
  • green onions, sliced (optional)

Instructions 

  • In a large bowl, combine the chicken, salt, garlic, and ginger. Cover and refrigerate for 20 minutes.

  • Add the cornstarch to the chicken and toss until evenly coated.
