Tips for Best Results

  • Use full-fat coconut milk – Full-fat coconut milk gives the sauce its rich, creamy texture. Light coconut milk will make the sauce thinner and less flavorful.
  • Bloom the curry paste first – Cooking the curry paste in oil for 1-2 minutes wakes up the spices and deepens the flavor of the sauce.
  • Do not thaw the dumplings – Add frozen dumplings straight to the baking dish. Thawing them first can cause them to become too soft or fall apart.
  • Make sure dumplings are mostly covered in sauce – This helps them steam and cook evenly while baking.
  • Adjust the sauce thickness – Coconut milk brands vary. Add closer to ½ cup of water if the sauce seems too thick.
  • Taste the sauce before baking – A quick taste lets you adjust lime juice, salt, or curry paste before it goes in the oven.
  • Use a tightly covered dish – Covering the baking dish with foil helps the dumplings steam and cook through before finishing uncovered.
  • Finish with toppings – Fresh cilantro, green onions, and chili crunch add brightness, texture, and contrast to the creamy curry sauce.
  • Serve with rice if you want extra sauce – These baked curry dumplings make a great rice bowl because the coconut curry sauce is incredibly flavorful.

Wow! Do these look and sound fantastic!! I currently have NONE of these ingredients or I’d make them ASAP, so I’ve saved the recipe and will definitely comment once I make them (wish I could provide a rating for you, but I’m honest). I also no longer live anywhere near a Trader Joe’s; I love their gyoza and even their gyoza sauce (before I figured out how to make my own). Understand, though, that 14-20 dumplings will feed just 2 in my house – hubby and me, even with rice or noodles!! We are piglets. Thank you for this recipe!
