Ingredients 

  • 1 pound baby potatoes, any variety, washed and halved
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1½ pounds boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 tablespoons blackened seasoning
  • 1 package fresh green beans, (12 ounces)
  • 1 package frozen sweet corn kernels, (10 ounces)
  • 2 tablespoons fresh parsley
  • 1 lemon, sliced or cut into wedges

Instructions 

  • Preheat the oven to 425°F. Line a sheet pan with parchment paper, foil, or a silicone mat.
  • Add the potatoes to a mixing bowl with 1 tablespoon olive oil, salt, and black pepper. Mix until evenly coated.
