Oven Roasted Potatoes

I have to tell you, this Oven Roasted Potatoes recipe has been my favorite side dish as of lately. One of the crazy things about me is, I get into these habits were I just keep doing the same things over and over. Maybe you do it too? In this particular case, it just happens to be making these potatoes … a lot!

Even though we’ve had these potatoes a hundred million times in the past, I get on this kick where it’s the only thing I want to eat … and since I do the cooking, that’s what we eat! Seriously. I think Brian and the kids are kind of sick of potatoes!

Th thing I love is that it is super easy to switch it up a but by using different seasonings! Usually, I’m good with just salt and pepper – but I love to add garlic powder, paprika, rosemary or any other herb or spice that strikes my fancy at the time! You just can’t go wrong! Although we enjoy them most often for dinner, they’re just a great at breakfast! Enjoy!

Oven Roasted Potatoes

Oven Roasted Potatoes make a great side dish for any meal! Perfectly tender potatoes that are easy to make!

Cook: 1 hour
Total: 1 hour 10 minutes

Ingredients 

  • 6 medium baking potatoes, scrubbed and cut into bite-sized pieces
  • ¼ cup olive oil
  • ½ teaspoon salt
  • 2 cloves garlic, minced
  • Pepper, to taste

Instructions 

  • Preheat oven to 375°F. Spray a baking sheet with cooking spray or line with non-stick aluminum foil. Set aside.
  • Place the potatoes in a large bowl. Add the remaining ingredients and mix well. Transfer the potatoes to the prepared baking sheet.
  • Bake 55-60 minutes, stirring every 15-20 minutes, or until the potatoes are tender, crisp and lightly browned.

Notes

  • Feel free to switch out the seasoning to match your main dish.
