Our family doesn't really do a whole lot for St. Patrick's Day. We usually have a themed meal and maybe we enjoy a few green treats, but that's about the extent of our celebrating.
One of the great things about these muffins is, you don't have to wait until St. Patrick's Day to enjoy them - they are great year round! We sometimes have them for breakfast ... and sometimes they accompany dinner! Enjoy!
Irish Soda Muffinsby
- 2¼ cups all-purpose flour
- ½ cup sugar
- 2 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- 1 cup sour cream
- ¼ cup milk
- ¼ cup vegetable oil
- 1 egg, beaten
- ⅔ cup raisins
1. Preheat oven to 400°F. Line a muffin tin with paper liners. Set aside.
2. In a medium bowl, combine the flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk the sour cream, milk, oil and egg; stir into the dry ingredients just until moistened. Fold in raisins.
3. Fill muffin cups two-thirds full. Bake for 15-18 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing to a wire rack. Serve warm.
