If you are looking for a new muffin recipe for breakfast, then today’s recipe is for you! It’s quick, easy, and uses stuff you probably already have on hand … and now that strawberries are starting to come in season, this recipe is a great way to use a few of them!
I had a few fresh strawberries that needed to be used, so I decided to toss them into my chocolate chip muffins recipe – and the kids loved them. They’ve become a favorite with my kiddos.
Recipe for Chocolate Chip Muffins
Ingredients for the muffins
- all-purpose flour
- granulated sugar
- baking powder
- salt
- egg
- milk
- vegetable oil
- mini chocolate chips
- fresh strawberries
Ingredients for the streusel
- all-purpose flour
- granulated sugar
- butter
How to make Chocolate Chip Muffins
Time needed: 1 hour and 5 minutes
How to make Strawberry Chocolate Chip Streusel Muffins
- Preheat oven.
Preheat the oven to 400°F.
- Combine dry ingredients.
In a large bowl, combine the flour, sugar, baking powder, and salt.
- Prepare batter.
n a small bowl, beat the egg with the milk and oil. Stir the wet ingredients into the dry ingredients just until moistened. Fold in the chocolate chips and strawberries.
- Fill cups with batter.
Fill greased or paper-lined muffin cups 3/4-full.
- Prepare streusel and sprinkle over the top.
In a separate small bowl, combine the streusel ingredients – cutting the butter into the flour and sugar until it forms coarse crumbs. Sprinkle the streusel mixture evenly over the tops of the muffins.
- Bake.
Bake for 18-20 minutes or until the muffins test clean when a toothpick is inserted near the middle.
- Cool.
Cool 5 minutes before removing to a wire rack to cool completely.
