Chocolate Chip Muffins

If you are looking for a new muffin recipe for breakfast, then today’s recipe is for you! It’s quick, easy, and uses stuff you probably already have on hand … and now that strawberries are starting to come in season, this recipe is a great way to use a few of them!

I had a few fresh strawberries that needed to be used, so I decided to toss them into my chocolate chip muffins recipe – and the kids loved them. They’ve become a favorite with my kiddos.

  • all-purpose flour
  • granulated sugar
  • baking powder
  • salt
  • egg
  • milk
  • vegetable oil
  • mini chocolate chips
  • fresh strawberries

How to make Chocolate Chip Muffins

Time needed: 1 hour and 5 minutes

How to make Strawberry Chocolate Chip Streusel Muffins

  1. Preheat oven.

    Preheat the oven to 400°F.

  2. Combine dry ingredients.

    In a large bowl, combine the flour, sugar, baking powder, and salt.

  3. Prepare batter.

    n a small bowl, beat the egg with the milk and oil. Stir the wet ingredients into the dry ingredients just until moistened. Fold in the chocolate chips and strawberries.

  4. Fill cups with batter.

    Fill greased or paper-lined muffin cups 3/4-full.

  5. Prepare streusel and sprinkle over the top.

    In a separate small bowl, combine the streusel ingredients – cutting the butter into the flour and sugar until it forms coarse crumbs. Sprinkle the streusel mixture evenly over the tops of the muffins.

  6. Bake.

    Bake for 18-20 minutes or until the muffins test clean when a toothpick is inserted near the middle.

  7. Cool.

    Cool 5 minutes before removing to a wire rack to cool completely.

You’ll want to use this recipe within 2-3 days. If you need more time than that, freezing is your best option.

Yes! Once the muffins are completely cool, wrap each one individually in plastic wrap or aluminum foil, then place them in a large zip-top bag or freezer-safe container. They’ll be good for up to 3 months.
When you’re ready to eat them, remove the desired number of muffins from the freezer and unwrap them. Allow them to thaw at room temperature.

For the muffins

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt

  • cup vegetable oil
  • ¾ cup mini chocolate chips
  • ½ cup strawberries, hulled and diced

For the streusel
