Sometimes the best things in life really are simple. This Unstuffed Cabbage Roll Casserole is a little bit different and a nice play on traditional Cabbage Rolls. It is easy to prepare and very economical. Plus, there is no need to precook the cabbage! If you would like, you may also top the cabbage with another can of tomato sauce, to make it more like the traditional dish. We like to have this with a veggie, cottage cheese, and some kind of bread on the side.
Recipe for Unstuffed Cabbage Rolls
- lean ground beef
- green bell pepper
- medium onion
- garlic
- diced tomatoes
- tomato sauce
- long-grain rice
- salt
- basil
- oregano
- pepper
- coleslaw mix or small head of cabbage
- shredded Cheddar cheese, optional
How to make Easy Unstuffed Cabbage Rolls:
- Preheat the oven to 350° F. Spray a 13x9x2-in. baking pan with cooking spray and set aside.
- Meanwhile, cook the beef, bell pepper, onion, and garlic in a skillet until meat is no longer pink; drain. Stir in tomatoes, tomato sauce, rice, and seasonings.
- Spread the beef mixture into the prepared baking dish. Top with cabbage and the cheese, if desired. Cover with aluminum foil (spray foil with cooking spray if using cheese or extra tomato sauce).
- Bake for 1 hour and 15 minutes (75 minutes) or until the rice is tender.
- Serve hot!

A few tips for Unstuffed Cabbage Roll Casserole:
- Ground turkey can be substituted for the ground beef.
- This casserole is a great make-ahead dish! Prepare and bake the casserole as directed in a freezer-safe or disposable aluminum pan. Allow the casserole to cool completely then cover the pan tightly in aluminum foil and freeze for up to 3 months. Thaw in the refrigerator overnight before reheating in a preheated 350°F oven for about 30 minutes or until heated through and bubbly.
- If you would like, you may also top the cabbage with another can of tomato sauce, to make it more like the traditional dish.

Real cabbage rolls have no cheese. I do like the idea of this as a casserole as it’s much easier to do. No cheese, though. 😉. A can of some chopped tomatoes with sauce would be a great addition and some paprika. Serve it with sour cream and a slice of bread and you have a good Eastern European meal.

You probably can but I’m not familiar enough with it to guide you. You may need to adjust the recipe slightly to accommodate the use of instant rice.
