Ingredients 

  • 1 pound ground turkey
  • 1 large egg, lightly beaten
  • 1 tablespoon olive oil
  • ½ cup crumbled feta cheese
  • ¼ cup finely grated red onion
  • ¼ cup breadcrumbs
  • 2 cloves garlic, minced
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon dried mint
  • ½ teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • zest of 1 lemon, optional

Instructions 

  • Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  • In a small bowl, whisk together the egg and olive oil.
  • In a large bowl, combine all the ingredients. Mix gently with your hands or a spoon. Try not to overmix – just until it comes together.
