When I first ran across this recipe years ago, I wasn’t sure what to think. I’m not particularly fond of hot dogs – but my boys love them. (I can’t seem to get past the horror stories I was told as a child of “what goes into hot dogs”) Truthfully, at the time, I needed some budget-friendly recipes. I saw the original recipe in a Quick-Cooking magazine and decided to give it a try. My boys liked it so much, I immediately put the recipe in our binder. I have modified it a bit over time to suit my family’s tastes. Although I have never tried it, I have thought about replacing the hot dogs with chicken. It is a quick, cheap and filling dinner.
- 1/2 lb. bacon strips, diced
- 1 small onion, chopped
- 1/3 cup green pepper, chopped
- 2 stalks of celery, chopped
- 3 garlic cloves, minced
- 1 cup unsweetened pineapple juice
- 3/4 cup ketchup
- 1 pkg. (1 lb.) hot dogs, cut into bite-sized pieces
- Pineapple chunks or tidbits, drained, optional
- Cooked rice
- In a medium saucepan, cook bacon until crisp. Drain bacon on paper towels; set aside. Drain bacon grease, reserving 1 tablespoon of the drippings. Saute the onion, celery, green pepper and garlic in the drippings until tender. Add pineapple juice, ketchup and chili powder; mix well. Bring the mixture to a boil. Add the hot dogs and return to a boil. Reduce heat and cover; simmer 8 minutes or until the hot dogs are heated through. Stir in the pineapple, if desired and cook another 3-5 minutes or until the pineapple are heated through. Mix in bacon.
- Serve over rice.
