  • choice of toppings – pancake syrup, fruit, whipped topping, sprinkles, powdered sugar, etc …

How to make Rainbow Pancakes

Prepare the milk mixture. In a medium bowl, combine the milk and vinegar. Set it aside for five minutes.

Ingredients 

  • 1 cup milk
  • 2 tablespoons white vinegar
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • 2 tablespoons salted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  • Pour the flour mixture into the wet ingredients and whisk until the lumps are gone.
  • Divide the pancake mixture between six smaller bowls. Color each bowl a different shade of food coloring. Allow to sit for 5 minutes.
  • Meanwhile, preheat a skillet or griddle over medium heat.
  • Spray the skillet lightly with cooking spray. Starting with the first color, add half of the batter to the skillet or griddle.
  • Cook until bubbles start to form and burst in the center of the pancake, about 2-3 minutes. Flip and allow it to cook an additional 1-2 minutes until cooked through and set aside on a plate. Repeat with the remaining batter, then move on to the next colors.
  • Serve immediately with toppings of choice.

Notes

  • Easily double the recipe if you need to make more.
  • This recipe makes 12 regular size pancakes. When making this for my family, sometimes I will make smaller silver dollar-sized pancakes.
  • This is a great base recipe. You can use whatever colors you want to fit your theme.
  • I use gel food coloring. They are much more vibrant, and a little goes a long way.
  • Leftovers kept in the fridge will last for up to 5 days. Or, freeze for up to 3 months.
