Ingredients

For the cupcakes

  • butter and granulated sugar – are the base of the cake batter. I prefer to use unsalted butter, but you can use salted if that’s what you have on hand.
  • eggs, vanilla extract, and whole milk – the wet ingredients for the cake batter. Use real vanilla beans or vanilla bean paste for a more intense flavor.
  • cake flour, baking powder, and salt – the dry ingredients for the cake batter. All-purpose flour can be used in place of cake flour.
  • food coloring – red, orange, yellow, green, blue, and purple. I prefer to use gel food coloring for a more vibrant color.

For the frosting

  • unsalted butter and powdered sugar – the ingredients combine to make the frosting. Make sure the butter is at room temperature.
  • vanilla extract and milk – to thin and flavor the frosting.
  • sprinkles – for topping the cupcakes. They’re optional but a great way to top the cupcakes!

How to make Rainbow Cupcakes

Prepare oven and baking pan. Preheat the oven to 350℉ and line a cupcake pan with cupcake liners. Set aside.

Cream the butter and sugar. In a large mixing bowl, cream together the butter and sugar until light in color and fluffy.

Add ingredients. Beat in eggs one at a time until fully mixed in. Then, add the vanilla extract and beat until mixed in.  Set aside.

Combine dry ingredients and add to wet ingredients. In a medium-sized mixing bowl, sift together the flour, baking powder, and salt. Add the dry ingredients to the wet ingredients in thirds, alternating between the flour mixture and the milk until incorporated.

Divide and color the batter. Divide the batter evenly into six separate small bowls. Add one color of the food coloring into each of the bowls and mix until the desired intensity of color is achieved.

Fill the cupcake pan. Using six spoons, begin spooning the batter into the cupcake-lined pan, starting with purple, followed by blue, green, yellow, orange, and ending with red.

Bake and cool. Bake until a toothpick inserted into the center of a cupcake comes out clean. Transfer the cupcake pan to a wire rack to cool to room temperature when fully baked.

Prepare the frosting. Beat the butter until the color has lightened. Then, add in the powdered sugar, one cup at a time, until fully incorporated. Pour in the milk and vanilla and beat until light and fluffy.

Frost and decorate the cupcakes. If desired, transfer the frosting to a piping bag with a star tip or frost the cupcakes using your desired method. Decorate with sprinkles or rainbow candies.

  • 2 sticks unsalted butter, softened, 1 cup
  • 1 ¼ cups granulated sugar
  • 4 large eggs, room remperature
  • 1 tablespoon + 1 teaspoon vanilla extract
  • 1 ¼ cups whole milk
  • 3 cups cake flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • gel food coloring – red, orange, yellow, green, blue, and purple

For the frosting

  • Using six spoons, begin spooning the batter into the cupcake-lined pan, starting with purple, followed by blue, green, yellow, orange, and ending with red.
  • Bake for 20-25 minutes at 350℉, or until a toothpick inserted into the center of a cupcake comes out clean. Transfer the cupcake pan to a wire rack to cool to room temperature when fully baked.
  • While the cupcakes are cooling, make the frosting. In a stand mixer bowl or large mixing bowl, beat the butter on medium until the color has lightened (about 5 minutes). Add in the powdered sugar, 1 cup at a time, and beat for 1 minute between each addition ending with the final 1/2 cup. Pour in the milk and vanilla and beat for another 2-3 minutes until light and fluffy.
  • Transfer the frosting to a piping bag with a star tip if desired. Frost the cupcakes using the piping bag or using a spatula. If desired, decorate with sprinkles or rainbow candies.
