Instructions
In a medium bowl, combine milk with vinegar. Set aside for 5 minutes.
In a medium mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
Place the egg, butter, and vanilla into a large mixing bowl and whisk in the milk mixture.
Pour the flour mixture into the wet ingredients and whisk until the lumps are gone.
Divide the pancake mixture between six smaller bowls. Color each bowl a different shade of food coloring. Allow to sit for 5 minutes.
Meanwhile, preheat a skillet or griddle over medium heat.
Spray the skillet lightly with cooking spray. Starting with the first color, add half of the batter to the skillet or griddle.
Cook until bubbles start to form and burst in the center of the pancake, about 2-3 minutes. Flip and allow it to cook an additional 1-2 minutes until cooked through and set aside on a plate. Repeat with the remaining batter, then move on to the next colors.
Serve immediately with toppings of choice.

Easily double the recipe if you need to make more.
This recipe makes 12 regular size pancakes. When making this for my family, sometimes I will make smaller silver dollar-sized pancakes.
This is a great base recipe. You can use whatever colors you want to fit your theme.
I use gel food coloring. They are much more vibrant, and a little goes a long way.
Leftovers kept in the fridge will last for up to 5 days. Or, freeze for up to 3 months.
