As you may recall, I mentioned that I haven’t really been posting too much lately because I got really, really sick and it seemed to take forever to get better. Aside from a little bit of a cough, I feel mostly better and that’s a good thing considering I have a trip to Las Vegas later this week!

When I planned out our meals for this week, the ones I would cook before I leave and the ones Brian will have to cook while I’m gone, I figured this was one of those weeks where easy needed to be the name of the game! Between getting everything ready for my trip and making sure my kiddos and husband will survive a few days without me, I just don’t want to stress about dinner!

As someone who could eat Mexican, Tex-Mex or Southwest-inspired food 365 days out of the year, I was kind of craving Burrito Bowls …. you know, like the kind you get at that famous restaurant? The problem was, I wasn’t really feeling up to making everything myself!

If chicken isn’t your thing, you can use Del Real Foods Barbacoa, Shredded Beef, or Carnitas! I love the Ranchero Beans, but feel free to use Del Real Foods Frijoles Negros if you prefer black beans! If you need salsa, be sure to check out the Del Real Foods salsas too!

Ingredients 

Instructions 

  • Prepare ingredients according to their recipe directions. Chop the chicken and set aside.
  • For each serving, layer ingredients in the following order: Cilantro Lime Rice, Ranchero Beans, Chipotle Chicken, Corn Salsa, shredded Mexican Cheese, and guacamole.
  • If desired, top each serving with sour cream and salsa. Serve immediately.

  • Set out an entire topping bar for everyone to make their own bowl.
