Peach Cheesecake

I look forward to peach season every year. I’m not gonna lie, I wish it were a longer season. There’s nothing better in the middle of the summer than a fresh, juicy peach!

It should come as no surprise that I like to peaches to flavor many of our summer treats … but what do you do during the off-peak season? Many years ago, I experimented with using peach Jello in my no-bake cheesecake recipe – and now, it’s a family favorite! While I personally LOVE peach, you can use any flavor of Jello you like! I think we’ve tried all of the flavors and my family also really likes lime and strawberry! ?

This is one of the easiest dessert recipes ever! You will only need a few ingredients to make this mouth-watering No-Bake Peach Cheesecake! I love taking a few of these babies to potlucks, and we almost always include one of these cheesecake pies in our summer get-togethers!

I will also note that you can easily make your own graham cracker crust in a 9×13-inch pan and double the recipe for the cheesecake part to feed a larger crowd. Sometimes, I put graham cracker crumbs in the bottom of a small glass jar and fill the jars with the cheesecake filling. Feel free to adjust the recipe a bit to fit your needs! The pre-made graham cracker crumb crusts work for me because they’re so easy!

No-Bake Peach Cheesecake

Ingredients 

  • 2 blocks Challenge Cream Cheese, softened, 8 oz. each
  • ½ cup granulated sugar
  • 1 box Jello peach flavored gelatin, 3 oz.
  • cup vanilla flavored dry coffee creamer
  • 1 container frozen whipped topping, thawed, 8 oz.
  • 1 9-inch graham cracker crumb crust

Instructions 

  • Place the cream cheese in a large mixing bowl. Mix it well with an electric mixer. Add the sugar, peach gelatin and coffee creamer. Mix well.
  • Add the whipped topping and mix until well combined. Spread the mixture into the pie crust.
  • Cover and refrigerate for at least 2 hours before slicing and serving.

Notes

  • Use any flavor of gelatin.

    Just curious why the dry coffee creamer? Sometimes the vanilla flavored ones can be very fake tasting or overpowering. Might use the some plain with the vanilla to break up the vanilla flavor. I will definitely try this as I love peach. Prob good with the lime, raspberry, and strawberry

      it’s just another layer of flavor and helps add more creaminess. You would be fine with just unflavored dry coffee creamer, and honestly, you can probably omit it completely if you prefer.

    Made the jello with the juice off canned peaches. Let the jello chill until thick, 40 min. Whipped it til double in size. Then whipped the cream cheese and sugar. Didn’t have cool whip or creamer, so omitted these. Puréed the peaches and mixed them into the cream cheese. Added 2 tsp vanilla and 1/2 tsp almond extract. Folded in the whip led jello until well mixed. Poured into graham cracker crust in a brownie pan (9 x7) and chilled. It was marvelous. Thanks for the inspiration!

      You could probably omit it – it just lends a creamier taste.

      Sugar-free gelatin should be fine – no need to add sugar.

      I was thinking maybe vanilla protein powder. It would add the vanilla flavor and up the protein. Just a thought.

    Gotta make this soon. I make a 5 min pie it's a no bake all you need is jello any flavor, cool whip,yogurt any flavor and graham cracker crust, make jello according to instructions on box let cool slightly and the yogurt and cool whip mix to incorporate everything pour into crust let set in fridge I like the yogurt with the friut on the bottom. That's it.
