Growing up, I don’t recall having this Easy Corn Casserole … my mom often made Scalloped Corn (which I love!) for Thanksgiving. I first recollect having this dish when I was attending a mom’s group at a local YMCA. I enjoyed it so much, I knew I had to get the recipe. I’ve used this recipe for about 15 years and it’s always a hit! Although we enjoy it at Thanksgiving, we also eat it occasionally throughout the year for regular meals! It’s a comforting side dish casserole and it’s so easy to make!
- 1/2 cup (8 tbsp. or 1 stick) butter, melted
- 2 large eggs, beaten
- 1 box (8.5 oz.) dry corn bread mix
- 1 can (15 oz.) whole kernel corn, drained
- 1 can (14.75 oz.) creamed corn
- 1 cup sour cream
- Preheat oven to 350°F. Spray an 8x8-inch baking dish with cooking spray and set aside.
- In a medium bowl, combine all ingredients. Spoon mixture into prepared dish.
- Bake for 45 minutes or until the top is golden brown.
