Who else is already planning for Thanksgiving?! I’m already starting to plan the menu and you can bet this Easy Corn Casserole will be on the list!

Growing up, I don’t recall having this recipe … my mom often made Scalloped Corn (which I love!) for Thanksgiving. I first recollect having this dish when I was attending a mom’s group at a local YMCA. I enjoyed it so much, I knew I had to get the recipe. I’ve used this recipe for about 15 years and it’s always a hit! Although we enjoy it at Thanksgiving, we also eat it occasionally throughout the year for regular meals! It’s a comforting side dish casserole and it’s so easy to make!

Recipe for Corn Casserole

  • butter – salted or unsalted works in this recipe
  • large eggs
  • dry corn bread mix
  • whole kernel corn
  • creamed corn
  • sour cream

How to make Corn Casserole

Time needed: 50 minutes

How to make Corn Casserole

  1. Preheat oven and prepare baking dish.

    Preheat oven to 350°F. Spray an 8×8-inch baking dish with cooking spray and set aside.

  2. Combine ingredients and place in baking dish.

    In a medium bowl, combine all ingredients. Spoon mixture into prepared dish.

  3. Bake.

    Bake for 45 minutes or until the top is golden brown.

Ingredients 

  • ½ cup butter, melted, 8 tablespoons or 1 stick
  • 2 large eggs, beaten
  • 1 box dry corn bread mix, 8.5 oz.
  • 1 can whole kernel corn, drained, 15 oz.
  • 1 can creamed corn, 14.75 oz.
  • 1 cup sour cream

Instructions 

  • Preheat oven to 350°F. Spray an 8×8-inch baking dish with cooking spray and set aside.
  • In a medium bowl, combine all ingredients. Spoon mixture into prepared dish.
  • Bake for 45 minutes or until the top is golden brown.

Notes

  • You can also add shredded cheese on top before baking. I love cheddar.

    I grew up on scalloped corn too, but we love a good corn casserole now. We normally have ours with BBQ, but it would be a perfect Thanksgiving side!
