Slow Cooker Honey Sesame Chicken and a Slow Cooker Giveaway!

I received a Hamilton Beach Set & Forget® 6 Qt. Programmable Slow Cooker With Spoon/Lid to facilitate this post. Any and all opinions expressed are my own.

The weather is finally starting to cool off here in Phoenix. By cool off, I mean the highs are still in the 80’s and 90’s. While it may seem rather warm to y’all, after spending the past few months hotter than you know what, 80-90 degrees is kinda cool. I’m not complaining, I love the weather here! 😉

Just like many of you, when the cooler temperatures come, I try to cook more often with my slow cooker! Well, really I try to do it all year, but for some reason I feel more compelled in the Fall and Winter. There’s just something about having a hot, comforting meal with very little fuss at the end of the day! Am I right?

Many of my regular readers know that I am a huge advocate of bringing families back to the dinner table. This time spent together is often more than just eating …. it’s communicating and connecting with one another. So many of us are going fifty-million directions at once, making dinner-time hectic. Slow cooker cooking makes meal prep stress-free and mostly hands off … meaning, dinner can be ready when you are!

I honestly love slow cooker cooking – I actually need to do more of it! I am particularly fond of the Hamilton Beach Set & Forget 6 Qt. Programmable Slow Cooker with Spoon/Lid – there are so many features that are especially nice! I love that there are three options for easy, automatic cooking – program, probe and manual mode! And I love the clip-locks which secure the lid – making it perfect for tailgating or potlucks!

I grabbed this bit of information from the Hamilton Beach website:

On busy days, program the cooking time and Set & Forget® Slow Cooker automatically shifts to keep warm when the cooking time is up. Cooking a large cut of meat like pot roast, chicken, or pork tenderloin? Insert the probe, set the desired meat temperature and the Set & Forget® Slow Cooker automatically shifts to keep warm when the temperature is reached. For traditional slow cooking, manually select the high, low or warm temperature without setting a cooking time.

For “one-pot” simplicity, nothing beats slow cooking. But when it comes to bringing hot meals to parties and potlucks, spills can be a concern. With the travel-friendly Set & Forget® Slow Cooker, messes aren’t an issue. When you need to take your home-cooked meal on the road, the Set & Forget® Slow Cooker’s clip-locked, secure lid has a tight seal to help ensure that your shirt and your car arrive without a messy spill. In or out of the house, the Set & Forget® Programmable Slow Cooker not only makes slow cooking easy, it has travel neatly wrapped up.

This Slow Cooker Honey Sesame Chicken is perfect for those crazy nights … or not so crazy nights where you need a meal without a lot of fuss! Its a dish the entire family will love – and you will love how easy it comes together! My family prefers this as shredded chicken, but you can just as easily leave it in bigger chunks. Leftovers (if there are any), are just as great reheated the next day for lunch! We enjoy this meal with steamed broccoli and lumpia shanghai. Just thinking about it makes me want to make this meal again! I hope you enjoy this as much as my family does! 🙂

Ingredients

  • 3 lb. chicken breasts or thighs
  • Pepper, to taste
  • 1 cup honey
  • ½ cup soy sauce
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • ¼ cup ketchup
  • 1 teaspoon sriracha sauce
  • ½ teaspoon sesame oil
  • cup cold water
  • 3 tablespoons cornstarch
  • Sesame seeds, optional
  • Chopped green onions, optional
  • Hot cooked rice or noodles, for serving

Instructions

  • Season chicken with pepper and place in a slow cooker.
  • In a small bowl, combine honey, soy sauce, vegetable oil, garlic, ketchup, sriracha sauce and sesame oil. Pour the mixture over the chicken.
  • Cover and cook on HIGH for 1½-2½ hours or on LOW for 3-4 hours. If you have a slow cooker with a probe option, you can cook the chicken until it reaches 165°F.
  • When the chicken is done cooking, remove it from the slow cooker and chop or shred the meat. Set aside.
  • In a small cup or bowl, combine the cold water and cornstarch. Add the cornstarch slurry to the juices in the slow cooker, stirring to combine the sauce. Cover and cook on HIGH for 10 minutes or until slightly thickened.
  • Return the chicken to the slow cooker, stirring well to coat with sauce.
  • Serve over hot, cooked rice or noodles. Sprinkle individual portions with sesame seeds and/or green onions, if desired.

Notes

  • Use tamari in place of soy sauce if you are gluten-free.
