Ingredients
3lb.chicken breasts or thighs
Pepperto taste
1cuphoney
½cupsoy sauce
2tablespoonsvegetable oil
4clovesgarlicminced
¼cupketchup
1teaspoonsriracha sauce
½teaspoonsesame oil
⅓cupcold water
3tablespoonscornstarch
Sesame seedsoptional
Chopped green onionsoptional
Hot cooked rice or noodlesfor serving
Instructions
Season chicken with pepper and place in a slow cooker.
In a small bowl, combine honey, soy sauce, vegetable oil, garlic, ketchup, sriracha sauce and sesame oil. Pour the mixture over the chicken.
Cover and cook on HIGH for 1½-2½ hours or on LOW for 3-4 hours. If you have a slow cooker with a probe option, you can cook the chicken until it reaches 165°F.
When the chicken is done cooking, remove it from the slow cooker and chop or shred the meat. Set aside.
In a small cup or bowl, combine the cold water and cornstarch. Add the cornstarch slurry to the juices in the slow cooker, stirring to combine the sauce. Cover and cook on HIGH for 10 minutes or until slightly thickened.
Return the chicken to the slow cooker, stirring well to coat with sauce.
Serve over hot, cooked rice or noodles. Sprinkle individual portions with sesame seeds and/or green onions, if desired.
Notes
Use tamari in place of soy sauce if you are gluten-free.
