How to make Pomegranate Mimosa

Ingredients

  • champagne or sparkling wine – look for Brut or Extra Brut on the label. You can also use Prosecco (Italian sparkling wine) or Cava (Spanish sparkling wine). For a non-alcoholic drink, use sparkling grape juice.
  • pomegranate juice
  • lime juice – fresh is best, although bottled will work in a pinch.
  • pomegranate arils
  • rosemary sprigs, for garnish

Instructions

  1. Pour the champagne or sparkling wine into the champagne flutes until about half full.
  2. Next, pour the pomegranate juice in the flute until the champagne becomes a deep red color, leaving about an inch or two from the top of the glass.
  3. Pour in 1 tablespoon of the lime juice and add a spoonful of the pomegranate arils.
  4. Garnish with a sprig of fresh rosemary and serve immediately.
