Ingredients 

  • 1 box Rice Chex cereal, (12 oz.)
  • 1 can sweetened condensed milk, (14 oz.)
  • ½ cup unsalted butter, melted
  • 1 cup white chocolate chips, or cream cheese chips
  • 1 box instant pistachio pudding mix, (3.4 oz.)
  • ½ teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 cups powdered sugar

Instructions 

  • Place the Rice Chex cereal in a very large mixing bowl. Set aside. You can also use a double-bagged brown paper bag for easier shaking.
    1 box Rice Chex cereal
  • In a large microwave-safe bowl, combine the sweetened condensed milk, melted butter, and white chocolate chips.
    1 can sweetened condensed milk, ½ cup unsalted butter, 1 cup white chocolate chips
  • Microwave in 30-second intervals, stirring between each interval, until the chips are fully melted and the mixture is smooth.
  • Stir in the dry pistachio pudding mix until fully combined and smooth.
    1 box instant pistachio pudding mix
  • Add the vanilla extract and salt. Stir until evenly incorporated.
    ½ teaspoon vanilla extract, ½ teaspoon salt
  • Pour the warm pistachio mixture over the cereal. Gently fold and toss until the cereal is evenly coated.
  • Add the powdered sugar and toss again until all pieces are fully coated. If using a paper bag, seal and shake gently until coated.
