Instructions
Preheat the oven to 350°F.
In a large skillet over medium heat, add the oil and curry paste. Cook for 1-2 minutes, stirring often, until fragrant.

Add the onion and ginger. Cook for 3-4 minutes, or until the onion softens.

Stir in the garlic and cook for 1 minute more.

Pour in the coconut milk and stir until the curry paste is fully mixed in.

Add the packed light brown sugar, soy sauce, toasted sesame oil, lime juice, and fish sauce. Bring to a gentle simmer and cook for 5 minutes.

Stir in ⅓-½ cup water until the sauce reaches your preferred consistency. Taste and add more lime juice or salt if needed.

Arrange the frozen dumplings in a 9x13-inch baking dish.
14-20 frozen pork dumplings
Pour the warm curry sauce over the dumplings, making sure they are mostly covered.
Cover tightly with foil and bake for 20 minutes.
Remove the foil and bake for 10 minutes more.
Top with cilantro, chili crunch, and green onions before serving.

🥡 STORAGE
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Keep extra sauce with the dumplings so they stay moist when reheated.
♨️ REHEATING
Reheat in the microwave in 30-second intervals until warmed through.
Reheat in a covered skillet over low heat with a splash of water or coconut milk if the sauce has thickened too much.
Reheat in the oven at 325°F, covered, until hot.
❄️ FREEZING
Freeze the baked dumplings and sauce in a freezer-safe container for up to 2 months.
Thaw overnight in the refrigerator before reheating for the best texture.
Keep in mind the sauce may separate slightly after freezing, but it should come back together as it warms.
💡 TIPS FOR BEST RESULTS
Use ½ cup of water if you want extra sauce for serving over rice.
Start with less curry paste if you want a milder baked dumplings recipe.
Make sure the dumplings are mostly covered with sauce so they bake evenly.
Garnish just before serving for the freshest flavor and texture.
