  • 9 ounces hard salami sausage, quartered lengthways and cut into ¼” slices
  • 6 ounces pepperoni sausage, cut in half and cut into ¼” slices
  • 8 ounces fresh mozzarella balls, drained
  • 13.75 ounces quartered artichoke hearts, drained
  • 1 pint cherry tomatoes, halved
  • 1 cup olives, halved lengthways
  • ½ large red onion, thinly sliced
  • ¼ cup parsley, finely chopped

Dressing:

  • ½ cup extra virgin olive oil
  • cup red wine vinegar
  • 2 tablespoons parmesan cheese, finely grated
  • 2 teaspoons Italian seasoning
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
