❤️ Why You’ll Love This Recipe

  • Only three ingredients. You just need dates, cream cheese, and walnuts.
  • No cooking required. Slice, fill, pinch, and they’re ready to serve.
  • Ready in 15 minutes. They’re perfect when you need a last-minute Halloween party food.
  • Deliciously disgusting. Plump, wrinkled dates make surprisingly convincing little cockroaches.
  • Easy to make ahead. Prepare them before your party and keep them refrigerated until serving time.
  • They’re actually good! Sweet dates, tangy cream cheese, and crunchy walnuts make a simple but tasty combination.

What are Halloween Stuffed Roaches?

Halloween Stuffed Roaches are stuffed dates made to look like cockroaches. No actual bugs are involved! 😅

Whole pitted dates are sliced lengthwise and filled with a simple mixture of softened cream cheese and finely chopped walnuts. Once filled, the dates are gently pinched around the filling.

That’s when things get creepy.

Dates already have the dark brown color, wrinkled exterior, and oblong shape needed to make surprisingly convincing date cockroaches. Add a few plastic roaches to the serving platter, and suddenly you’ve got a Halloween appetizer that may require a little convincing before anyone will eat it.

Thankfully, they taste much better than they look.

Key Ingredients

NOTE: This section highlights ingredients used in the recipe. Find the full printable recipe in the recipe card below.

Whole pitted dates: Look for nice, plump dates. Softer, larger dates are easier to slice and fill, and their naturally wrinkled appearance gives these Halloween date cockroaches their creepy look.

Cream cheese: Softened cream cheese creates the rich and creamy filling. Let it come to room temperature so it’s easy to mix and stuff into the dates.

Walnuts: Finely chopped walnuts add a little crunch and nutty flavor to the filling. Chopping them finely also makes the dates easier to fill.

Ingredients & Substitutions

NOTE: This section suggests substitutions. Find the full printable recipe in the recipe card below.

  • Cream cheese: Let it soften before mixing so it’s easy to combine with the walnuts and fill the dates. Full-fat cream cheese will give you the richest filling, but reduced-fat cream cheese can also be used. I wouldn’t use whipped cream cheese because its softer texture won’t hold as well inside the dates.
  • Walnuts: Finely chopped walnuts give the filling some crunch. Pecans are the easiest substitute and pair well with both cream cheese and dates. You can also leave the nuts out entirely.
  • Whole pitted dates: Look for plump, soft dates rather than ones that seem especially dry or tough. Larger dates are easier to slice and stuff. If you buy dates with pits, remove the pits before adding the filling.

Variations

  • Swap the walnuts. Finely chopped pecans would be an easy substitute and pair nicely with the dates and cream cheese.
  • Skip the nuts. Leave out the walnuts for a simple cream cheese-stuffed version.
  • Make them sweeter. You can mix a small amount of honey or maple syrup into the cream cheese if you want a sweeter filling.
  • Try a flavored cream cheese. A complementary flavored cream cheese can give the filling a different spin. Just remember that the original version gets plenty of sweetness from the dates themselves.
  • Change the presentation. You don’t have to add plastic bugs. The stuffed dates already look creepy enough to work as Halloween party food on their own.

Tips for Best Results

  • Pick the plumpest dates you can find. They’ll be easier to open and fill, and they make much better-looking “roaches.”
  • Soften your cream cheese first. Cold cream cheese is harder to combine with the walnuts and harder to get inside the dates.
  • Don’t cut all the way through. Slice just deeply enough to open the date and create a pocket for the filling.
  • Finely chop the walnuts. Smaller pieces distribute more evenly and make the cream cheese mixture easier to spoon or pipe.
  • Use a piping bag if you have one. With 32 dates to fill, piping can make the process faster and less messy.
  • Don’t worry about making them perfect. Slightly different sizes, shapes, and wrinkled surfaces actually make the finished cockroach dates look creepier.

FAQs

How do you make date cockroaches for Halloween?

Slice whole pitted dates lengthwise without cutting completely through them. Fill each date with a mixture of softened cream cheese and finely chopped walnuts, then gently pinch the sides around the filling. The shape and wrinkled exterior of the dates naturally create the cockroach appearance.

What kind of dates should I use for Halloween Stuffed Roaches?

Look for whole pitted dates that are plump and soft. Larger dates are easier to open and stuff, while their dark, wrinkled skin helps create the creepy roach-like appearance.

Do Halloween Stuffed Roaches contain real bugs?

Absolutely not. 😂 These “roaches” are dates filled with cream cheese and walnuts. You can add plastic cockroaches to the platter as decorations, but they aren’t part of the recipe.

Can I make these without walnuts?

Yes. You can omit the walnuts and fill the dates with softened cream cheese. This is also an easy option when you need to avoid nuts.

Can I substitute another nut for the walnuts?

Yes. Finely chopped pecans would work well with both the dates and cream cheese. Chop them fairly small so the filling remains easy to spoon or pipe into the dates.

Can I make Halloween Stuffed Roaches ahead of time?

Yes. Stuff the dates, cover them, and keep them refrigerated until you’re ready to serve. Add any plastic roach decorations to the platter at serving time.

Are these a dessert or an appetizer?

They can work as either. Dates add natural sweetness, while cream cheese and walnuts bring creamy, tangy, nutty flavors. They’re especially good as a small bite on a Halloween party spread with both sweet and savory foods.

Storage

Store leftover stuffed dates in an airtight container in the refrigerator. Because they’re filled with cream cheese, they need to remain refrigerated rather than sitting out for long periods.

They’re best served chilled or after sitting out briefly to soften the cream cheese.

Quick Steps

NOTE: This section includes a step-by-step guide. Find the full printable recipe in the recipe card below.

  1. Make the filling. Mix softened cream cheese with finely chopped walnuts until well combined.
  2. Slice the dates. Cut one side of each date lengthwise, being careful not to slice completely through it.
  3. Add the filling. Spoon or pipe the cream cheese mixture into the opening.
  4. Shape them. Gently pinch the sides of each date around the filling to create your creepy little stuffed date cockroaches.
  5. Serve or chill. Serve immediately or cover and refrigerate until you’re ready for them.

Prepare and fill the dates as directed, then place them in a covered container in the refrigerator until serving time. Wait until you’re ready to serve before arranging them on your platter and adding any plastic roach decorations.

That means one less thing to assemble while you’re getting everything else ready for the party.

What to serve with Halloween Stuffed Roaches

These creepy Halloween dates are perfect for a party table filled with other spooky snacks and treats. Since they’re sweet, creamy, and rich, I like serving them alongside a mix of savory finger foods, crunchy snacks, cookies, and Halloween desserts.

They’re also begging for a creepy Halloween punch on the side.

For the full effect, arrange the stuffed roaches on a white platter and scatter a few clean plastic cockroaches around them. Just keep the decorations clearly separate from the food, especially if children will be eating from the platter.

If You Enjoyed Halloween Stuffed Roaches

If the whole point of your Halloween menu is making people say, “I’m not eating that,” then you definitely need my Kitty Litter Cake. It’s another gross-looking Halloween recipe that’s actually a sweet treat underneath all that questionable presentation. 😅

For something creepy without being quite so gross, try my Monster Eye Cookies. They’re colorful, covered in candy eyes, and a fun way to add something a little cuter to the Halloween table.

You’ll need something to wash down all those roaches, so add my Witch’s Brew Halloween Punch. The purple punch is made with grape soda, lemonade, and sherbet, and the creepy garnishes fit right in with a spooky party spread.

My Halloween Monster Munch is another fun choice when you want something guests can grab by the handful. It’s a quick snack mix with appropriately gross Halloween names for all the goodies inside.

If you’re looking for something the kids can help make, try my Frankenstein Sugar Cookies. They’re more cute than creepy and make a fun contrast to a platter full of stuffed date cockroaches.

For the dessert table, my Halloween Bundt Cake brings plenty of Halloween color without complicated decorating. The bright layers and frosting make it a great centerpiece next to all your smaller Halloween treats.

And for another easy Halloween treat, make a batch of my Boo-nanas. They’re banana pops covered in white candy coating and coconut for a cute little ghost treat that’s a lot less frightening than these roaches.

Instructions

  • In a small bowl, mix the cream cheese and walnuts until well combined.
1 package cream cheese, ¼ cup finely chopped walnuts

  • Serve immediately or cover and refrigerate until serving time.

Notes

🥡 Storage: Store leftover Halloween Stuffed Roaches in an airtight container in the refrigerator.
Since they’re filled with cream cheese, keep them refrigerated when not serving.
♨️ Reheating: No reheating is needed. Serve these stuffed dates chilled or cool.
❄️ Freezing: I don’t recommend freezing these. The dates themselves can be frozen, but freezing and thawing may change the texture of the cream cheese filling. They’re quick enough to make that preparing them fresh is the better option.
💡 Tips for Best Results: Choose plump, soft dates that are easy to slice and fill.
Let the cream cheese soften before mixing.
Finely chop the walnuts so the filling is easy to spoon or pipe.
Don’t slice completely through the dates. You want to create a pocket for the filling.
If you’re making all 32 at once, a piping bag can make filling them faster.
Don’t try to make every date look identical. The different shapes and wrinkles make your date cockroaches even creepier.
🍳 Alternate Cooking Methods: None needed. Halloween Stuffed Roaches are completely no-cook.
♻️ Leftovers: Enjoy leftover stuffed dates straight from the refrigerator as a quick sweet snack. They taste just as good without the creepy Halloween presentation.
📝 Notes: For an extra-creepy presentation, arrange the stuffed dates on a platter with plastic cockroaches scattered around them.
Keep any plastic decorations separate from the food and make sure guests know they aren’t edible, especially when serving children.
