Ingredients 

  • 3 ripe mangos, diced
  • 1 red pepper, chopped small
  • ¼ cup chopped cilantro
  • ¼ cup finely diced onion
  • 1-2 jalapeños, chopped fine (optional)
  • juice of 1 lime, or 1/4 cup
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili powder, optional

  • corn
  • avocado
  • pineapple
  • parsley instead of cilantro

Instructions 

  • Add the mangos, red pepper, cilantro, onion, and jalapeños (if using) to a medium bowl.
    3 ripe mangos, 1 red pepper, 1/4 cup chopped cilantro, 1/4 cup finely diced onion, 1-2 jalapeños
  • In a small bowl, whisk the lime juice, salt, pepper, and chili powder (if using). Pour over the mango mixture.
