If you’re looking for easy but delicious ideas for Easter desserts, this recipe is for you. This is the classic Rice Krispies Treats with a springtime, Easter addition.

Some years we enjoy a traditional Easter dinner with ham, mashed potatoes with gravy, oven-roasted asparagus, and buttery rolls. Other years, we smoke meat, make lasagna, treat ourselves to a grilled steak dinner, or whatever meal strikes our fancy at the time.

Usually, I try to have three or four dessert choices with at least one being an allergy-friendly option. This year, I’m turning to this Rice Crispy Treats recipe.

This recipe is quick and easy to make. And, I love that it can easily be made allergy-friendly and gluten-free.

For this rice crispy treats recipe, you will need …

Ingredients

  • mini marshmallows, crispy rice cereal, butter – the ingredients combine to make your bars. If you are needing an allergy-friendly version, look for gluten-free rice krispies. Generally speaking, name brand mini marshmallows are allergy-friendly. I usually use salted butter. If needed, you can also use dairy-free butter in this recipe. As always, it’s important to read the back of your ingredients to ensure they’re safe.
  • Easter sprinkle mix – I got my mix at Walmart and they are free of any contaminants. A reminder that it’s important to read the back of your ingredients to ensure they’re safe if allergies are an issue.
  • butter or nonstick cooking spray – for coating the baking dish to prevent the treats from sticking. You can also use non-dairy butter.

This recipe needs to be stored in an airtight container or zip-top bag. They can be stored at room temperature for up to five to seven days.

➡️ Can you freeze this recipe?

Surprisingly, the answer is yes! Once cut into bars, wrap each bar in wax paper and place them in an airtight freezer-safe container or zip-top bag. When ready to eat them, take them out of the freezer and unwrap them. Let them sit on a plate or similar vessel at room temperature until unthawed, about 20-30 minutes.

Ingredients 

  • 6 cups mini marshmallows
  • 5 cups crispy rice cereal
  • 4 tablespoons salted butter
  • Easter sprinkle mix
  • butter or non-stick cooking spray

Instructions 

  • Grease or spray an 11 x7-in. pan with butter or non-stick cooking spray.
  • In a large microwave-safe bowl, combine the butter and marshmallows and place the bowl in the microwave. Heat on high for 1 minute and 30 seconds.
  • Immediately stir well until the butter is fully mixed into the marshmallows.
  • Quickly add the cereal and mix well until the cereal is fully covered.
  • Pour the cereal mixture into the prepared pan, spreading it evenly, and pressing it down to compact the mixture slightly.
  • Evenly shake the sprinkles over the top and lightly press them against the marshmallow so they stay stuck.
  • Cover with plastic wrap and let sit for about 4 hours or until hardened and easily cut without being gooey.
