This is a great recipe when you’re in a hurry but want something a little different than your usual menu items.

What is Bifteki

Greek Bifteki is a variation of keftedes (Greek meatballs). Bifteki means “hamburger,” and the name refers to how the meat is formed – usually as slightly flattened balls. The minced meat mixture is the same for both recipes. Typical Greek flavors are added to the meat mixture before being cooked.

➡️ Can I make this ahead?

Totally, you can make these and warm them up later again. Either warm the Biftekis up again in the air fryer or microwave. If you don’t just want to reheat leftovers, but to prepare them for a future event, I would cook them to medium, place them covered in the fridge, and reheat. That way, they will stay juicier.

You can also prepare the bifteki until step 5, and then instead of cooking them right away, cover them tightly and place them in the fridge for up to 1 day until you want to cook them.

Yes, sure! Just double or triple the amounts and cook in batches.

➡️ Can I freeze Bifteki?

Yes, they freeze very well. Place them in an airtight container or a plastic bag and freeze them for up to 3 months.

Recipe Tips

  • You can substitute the bread roll with either one slice of sandwich toast or 2 heaping tablespoons of bread crumbs.
  • With ground beef, you can also cook it to only medium doneness if you prefer it to be even juicier. Carefully check on bifteki after 10 minutes or use a thermometer to cook until 161°F.
  • It’s okay to place the bifteki a bit tight in your air fryer. They will shrink when cooked.
  • You can also use all ground pork or all ground lamb – or you can use a mixture of ground pork, ground lamb, and/or ground beef.
  • If you don’t like onions or have fussy kids, substitute with 1 heaping teaspoon of onion powder.
  • You can add minced garlic if you like it. Also, a dash of fresh lemon juice is an excellent addition.
  • If you have it at hand, use fresh oregano.
  • You can also play around with the filling. For example, why not try mozzarella, parmesan cheese, or gouda?
  • These bifteki can also be made in a pan, on the grill, or – if you want to make a larger amount – in the oven.

Ingredients 

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 stale bread roll
  • 1 cup lukewarm water
  • 1 pound ground beef
  • 1 handful parsley, chopped (around 2 tablespoons)
  • 2 medium eggs
  • 2 teaspoons dried oregano
  • 1 ½ teaspoons ground cumin
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 6 ounces feta cheese, cubed

Instructions 

  • Heat the oil in a small pan and cook the onions until soft and translucent. It´s okay if they brown a bit; that will enhance the flavor.
  • Soak the bread roll in water and once it’s completely soaked, wring out excess water.
  • Now mix all remaining ingredients – EXCEPT the feta cheese – and knead until combined.
  • Divide the ground beef mixture into either 4 bigger or 6 smaller parts and form each into a flat circle.
  • Divide the feta cheese between all meat circles and carefully close each piece so no cheese will leak out later.
  • Place bifteki into your air fryer and cook at 400°F for 12-14 minutes.
  • Serve immediately.
