Good morning, friends!! It's not very often that I say I'm glad it's Monday. Today, however, is one of those days.

This past weekend was very stressful. Nothing I'll go into .... being stressed out is just a part of life sometimes. Right? I hate feeling like I am being pushed to the max. One of the ways I handle stress is by baking! I made this yummy Orange Streusel Coffee Cake (and some other treats coming soon!!) to try to get my mind in another place. 

This Orange Streusel Coffeee Cake is soooo easy to throw together! You only need to dirty one bowl and the pan you bake it in!! The sugary topping pairs nicely with the cake giving it just a bit of extra sweetness.

Orange Streusel Coffee Cake

Yield: (6-8 servings)

Ingredients
    For the coffee cake:
    • 2 cups all-purpose flour
    • 1/2 cup sugar
    • 2 tsp. baking powder
    • 1/2 tsp. salt
    • 1 tbsp. orange zest
    • 1/2 cup milk
    • 1/2 cup orange juice
    • 1/3 cup vegetable oil
    • 1 egg
    • 1/2 tsp. vanilla extract
    For the topping:
    • 1/2 cup sugar
    • 1/4 cup flour
    • 2 tbsp. cubed butter

    Instructions

    1. Preheat an oven to 375°F. Grease and flour a 9-inch cake pan. Set aside.

    2. Whisk together flour, sugar, baking powder, salt and orange zest. Add the milk, orange juice, oil, egg and vanilla extract. Stir just until combined. Pour into the prepared pan.

    3. In a small bowl, combine the topping ingredients using a pastry blender or 2 crisscrossed knives until the mixture is the texture of cornmeal. Evenly sprinkle the mixture over the cake batter.

    4. Bake for 40-45 minutes, or until a toothpick inserted near the center tests clean. Allow to cool completely in the pan.

    6. Nothing is better to me than the flavor of Orange, especially in the morning. My father grew up in Florida. I have many memories (stories) from his childhood. He has been 20 years and I remember him, especially when I eat something with oranges.

      Glad your weekend is over and you are feeling less stressed.........I really hate feeling pushed to the max as well.
      not a fun thing............baking as a stress buster, never heard of that, but a very healthy way to deal with it for sure.
