Sunshine Smoothie with Banana and Mango

Do you ever find yourself making a recipe you enjoy, so you have it in your menu rotation for a while, then you forget about it? I swear I do it all of the time. We’ll go months and even years without having a dish or recipe we enjoy … because I forget about them. My head is always swirling with ideas of things to make or new recipe ideas to try. I can’t tell you how many times Brian or the kids have asked me to make some dish or recipe we enjoyed months ago (or even years ago). They kept hoping it would show back up on the menu again someday …. and it just disappeared. *shrugs*

This Sunshine Smoothie with Banana and Mango is one of those recipes we made for a few weeks, I loved it, and I promptly forgot about it for months. While cleaning out the freezer last week, I ran across the bags of mango chunks and pieces of banana – which instantly reminded me of this yummy concoction. It also reminded me that I needed to share it with all of you! And the sad thing is, with how easy and delicious this recipe is, I don’t know why I let it go for months and months before making it again!

My kiddos look forward to mornings when we make these smoothies. It’s a real treat for them. This recipe is super easy to whip up with just a few ingredients. We prefer our fruit frozen to make a thicker and frosty smoothie, but you don’t have to freeze it. My kiddos usually enjoy these smoothies with some muffins or breakfast sandwiches. I hope your family enjoys these Sunshine Smoothies with Banana and Mango as much as mine!

Ingredients 

  • 1 mango, peeled, seeded, and cut into chunks
  • 1 banana, peeled and broken into chunks
  • 1 cup orange juice
  • 1 cup vanilla-flavored Greek yogurt

Instructions 

  • Place all ingredients in a blender. Cover and process until smooth.
  • Immediately pour smoothie mixture into serving glasses and enjoy!

Notes

  • For a frosty drink, freeze the chunks of banana and mango ahead of time.
