For the cake

  • plain white cake mix – any brand you prefer.
  • melted ice cream and eggs – this is the liquid part of your cake. Use any flavor of ice cream you like!

For the frosting

  • powdered sugar and unsweetened cocoa powder – are typical ingredients used to make chocolate frosting.
  • large marshmallows, butter, milk, and vanilla extract – these bind everything together to make a thick, luscious, and velvety chocolate frosting that is PERFECT for your ice cream cake!
  • sprinkles or nonpareils – they are optional, but I think this cake needs them because sprinkles are for winners – and we’re winners. PLus, they add a fun dazzle of color on top of your cake.

How to make Melted Ice Cream Bundt Cake

Preheat the oven and prepare the bundt pan. Preheat the oven to 350°F. Grease and flour a 12-cup Bundt pan and set it aside.

Make the cake batter. In a large bowl, combine the cake mix, melted ice cream, and eggs with an electric mixer. Then, pour the batter into the prepared pan, smoothing out the top with a spatula.

Bake and cool. Bake until the edges just start to pull away from the pan. Then, allow the cake to cool in the pan on a wire rack for 15-20 minutes before inverting the cake onto the rack, and removing it from the pan. Allow the cake to cool completely.

Place the cooled cake on a cake stand or platter. Transfer the cooled cake to a serving platter or cake stand.

For the frosting

Sift. Sift the powdered sugar and cocoa into a medium bowl and set aside.

Heat, then combine ingredients. Heat the marshmallows, butter, and milk in a saucepan until the marshmallows are melted. Remove the pan from the heat and stir in the powdered sugar mixture. Add the vanilla. Stir until the frosting is smooth and shiny. 

To assemble the cake

  • 1 box plain white cake mix, 15.25 to 16.25 oz.
  • 1 pint melted ice cream, any flavor, or 2 cups
  • 3 large eggs

For the frosting

  • 2 cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 6 large marshmallows
  • 4 tablespoons butter
  • cup milk
  • 1 teaspoons vanilla extract
  • sprinkles or nonpareils, optional

Instructions
