Fish Nuggets

I am a big believer in using leftovers. I also believe in making a new meal out of an old meal if I can. It makes it feel like it’s not just “eating leftovers”, Again. I saw this recipe in a Quick Cooking cookbook by Taste of Home years ago.

After the first time I made this, it immediately went into my “Keeper” binder. You can vary the kinds of fish and seasonings to suit your family’s tastes.

Use salmon or tuna with Asian inspired seasonings and Asian-flavored dipping sauce, Tilapia with Mediterranean seasonings and a Mediterranean-flavored dipping sauce, Catfish with Creole seasoning and a spicy Cajun-flavored dipping sauce, LOTS of possibilities with this one!

This Fish Nuggets recipe is a great way to extend that little bit of leftover fish into enough to feed a family!

Fish Nuggets

Ingredients 

  • 2 large eggs, beaten
  • ½ cup dry bread crumbs
  • ½ cup Cheddar cheese, shredded
  • ¼ cup finely chopped onion
  • 1 clove garlic , minced
  • ½ teaspoon dried parsley
  • ½ teaspoon lemon pepper
  • 1 ½ – 2 cups flaked, cooked fish
  • oil for frying
  • tartar sauce, for serving (optional)

Instructions 

  • Heat 1 inch deep of oil in a large, deep skillet to 375° F.
  • In a bowl, combine the eggs, breadcrumbs, cheese, onion, garlic, parsley, and lemon pepper, mixing well. Stir in the fish.
  • Scoop the mixture and roll it into 1-inch balls.
  • Carefully place the balls in hot oil – make sure you don't overcrowd the pan and fry in batches if necessary. Fry until golden brown, turning as necessary to fry the fish balls evenly. Drain on paper towels.
  • Serve immediately with tartar sauce if desired.

    This would be great fro New Year's parties… can you you ANY fish? And/or canned fish?

      I'm guessing any pre-cooked fish would be fine. I've used fresh fish that has been cooked and canned tuna! Make sure it's thoroughly drained if you use canned. You may need to add more or less bread crumbs to get it to hold together. You can mix up the seasonings too! Hope that helps.
