Ingredients
2large eggsbeaten
½cupdry bread crumbs
½cupCheddar cheeseshredded
¼cupfinely chopped onion
1clovegarlic minced
½teaspoondried parsley
½teaspoonlemon pepper
1 ½ - 2cupsflakedcooked fish
oil for frying
tartar saucefor serving (optional)
Instructions
Heat 1 inch deep of oil in a large, deep skillet to 375° F.
In a bowl, combine the eggs, breadcrumbs, cheese, onion, garlic, parsley, and lemon pepper, mixing well. Stir in the fish.
Scoop the mixture and roll it into 1-inch balls.
Carefully place the balls in hot oil - make sure you don't overcrowd the pan and fry in batches if necessary. Fry until golden brown, turning as necessary to fry the fish balls evenly. Drain on paper towels.
Serve immediately with tartar sauce if desired.
Notes
Use salmon or tuna with Asian inspired seasonings and Asian-flavored dipping sauce, Tilapia with Mediterranean seasonings and a Mediterranean-flavored dipping sauce, Catfish with Creole seasoning and a spicy Cajun-flavored dipping sauce, LOTS of possibilities with this one!
