Ingredients 

Cake

  • 1 box white or funfetti cake mix, (about 15 ounces)
  • ingredients listed to prepare cake mix
  • 2 tablespoons sprinkles

Cream Cheese Frosting

  • 2 tablespoons unsalted butter, room temperature
  • 2 ounces cream cheese, room temperature
  • 1 cup powdered sugar, plus more as needed
  • ½ teaspoon vanilla extract

Candy Coating

  • 16 ounces vanilla candy coating
  • 2 tablespoons sprinkles

Instructions 

  • Preheat oven to 350°F. Spray a 9×13-inch baking pan with nonstick spray.
  • Prepare the cake mix according to the package directions using the cake mix, water, eggs, and oil. Mix on medium-high speed for 2 minutes, scraping the bowl as needed. Stir in sprinkles.

  • Pour batter into the prepared pan and bake according to box directions, about 25 minutes, until a toothpick inserted in the center comes out clean or with a few crumbs.
  • Allow cake to cool completely, then place in the freezer to chill.
  • To make the frosting, beat the butter and cream cheese until smooth. Add powdered sugar and vanilla extract and mix until thick but spreadable. Adjust with additional powdered sugar if needed.

  • Crumble the chilled cake by hand or using a mixer on low speed. Add 2 heaping tablespoons of frosting and mix. Add more frosting as needed until the mixture holds together when rolled.
  • Scoop the mixture using a small scoop, tablespoon, or melon baller. Roll into smooth balls and place on a parchment-lined baking sheet. Freeze while preparing the coating.
  • Melt the vanilla candy coating in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth.
