Fresh pumpkin: Five cups of peeled, cubed pumpkin give the curry its hearty texture.

Red curry paste: Adds savory spice and a little heat.

Full-fat coconut milk: Creates a smooth, rich sauce.

Pumpkin puree: Thickens the sauce and adds extra pumpkin flavor.

Ingredients & Substitutions

NOTE: This section suggests substitutions. Find the full printable recipe in the recipe card below.

There are a few easy swaps you can make depending on what you have on hand.

  • Cooking oil: Use avocado, grapeseed, or another neutral cooking oil.
  • Fresh pumpkin: Substitute peeled butternut squash in equal amounts.
  • Red and yellow bell peppers: Use orange or green bell peppers.
  • Red onion: Substitute yellow or white onion.
  • Minced garlic: Use garlic paste or garlic powder if needed.
  • Red curry paste: Yellow curry paste works, although the flavor changes. Curry powder is not a direct equivalent, so add it gradually to taste.
  • Ground cumin: Ground coriander offers a different but complementary flavor.
  • Ground ginger: Use freshly grated ginger to taste.
  • Allspice: Try a small pinch each of cinnamon, nutmeg, and cloves.
  • Sea salt: Table salt works; start with less and adjust to taste.
  • Full-fat coconut milk: Light coconut milk works but produces a thinner sauce.
  • Pumpkin puree: Use plain butternut squash or sweet potato puree, not sweetened pumpkin pie filling.
  • Fresh cilantro: Omit it if you prefer, or finish with a little fresh parsley.

Variations

  • Add protein: Stir in drained chickpeas or cooked chicken and heat through.
  • Turn up the heat: Add extra red curry paste or a pinch of chili flakes.
  • Add greens: Stir in baby spinach during the last few minutes.
  • Make it extra bright: Finish each bowl with a squeeze of lime juice.

Tips for Best Results

  • Pick a cooking pumpkin: Choose a small sugar or pie pumpkin that feels heavy for its size and has firm skin without soft spots.
  • Cut it safely: Wash and dry the pumpkin, halve it on a stable cutting board, scoop out the seeds, then cut it into wedges. Peel each wedge and cut into even 1-inch cubes. If it is too firm, pierce it and microwave briefly to soften before cutting.
  • Keep the pieces even: Uniform cubes cook at roughly the same rate.
  • Toast the spices: Stir the curry paste and dry spices for 1 to 2 minutes until fragrant, without burning them.
  • Use full-fat coconut milk: It makes the sauce especially creamy.
  • Check tenderness: Simmer until a fork easily pierces the pumpkin. Add a splash of water if the sauce gets too thick.
  • Check the curry paste: Some brands contain shrimp paste, so read the label if you need a vegetarian or vegan meal.

FAQs

Can I use butternut squash instead of pumpkin?

Yes! Peel and cut butternut squash into 1-inch cubes and use it in place of the fresh pumpkin. Cook until fork-tender.

What kind of pumpkin is best for curry?

Choose a small sugar pumpkin or pie pumpkin with firm skin and no soft spots. These cooking pumpkins have dense, flavorful flesh. Avoid large carving pumpkins, which can be watery and stringy.

How do I safely peel and cut fresh pumpkin?

Wash and dry the pumpkin. Set it on a steady cutting board, trim the stem end if needed, then carefully halve it with a sharp, sturdy knife. Scoop out the seeds, cut into wedges, peel the wedges with a vegetable peeler or knife, and cut into 1-inch cubes. If it is too hard to cut, pierce the skin and microwave it briefly to soften, then let it cool before handling.

Is this pumpkin curry spicy?

Red curry paste brings some heat, but the coconut milk and pumpkin help balance it. Start with less curry paste for a milder dish, then adjust to taste. Spice levels vary by brand.

Can I make pumpkin curry vegan?

Yes, if your red curry paste is vegan. Check the label because some brands contain shrimp paste. Serve with rice or vegan naan.

Can I use light coconut milk?

Yes, but the sauce will be thinner and less creamy than it is with full-fat coconut milk.

Can I freeze pumpkin curry?

Yes. Cool promptly, store in freezer-safe containers, and freeze for up to 2 to 3 months. Thaw overnight in the refrigerator and reheat until hot throughout.

Storage

Refrigerator: Cool the curry promptly and store in an airtight container in the refrigerator for 3 to 4 days.

Freezer: Freeze in freezer-safe containers for 2 to 3 months. Leave room for expansion.

Reheating: Thaw frozen curry overnight in the refrigerator. Reheat gently on the stovetop over medium-low heat, stirring occasionally, or microwave in intervals until hot throughout. Add a splash of water or coconut milk if needed.

Quick Steps

NOTE: This section includes a step-by-step guide. Find the full printable recipe in the recipe card below.

  • Heat the oil in a Dutch oven over medium heat.
  • Cook the cubed pumpkin, bell peppers, onion, and garlic for 4 to 5 minutes.
  • Stir in red curry paste, cumin, ginger, allspice, and salt. Cook for 1 to 2 minutes.
  • Add coconut milk and pumpkin puree, stirring until combined.
  • Cover and simmer for 15 to 20 minutes, stirring often, until the pumpkin is tender.
  • Remove from heat, stir in cilantro, and serve with rice or naan.

Make Ahead

You can peel and cube the pumpkin and chop the peppers and onion up to a day ahead. Keep the prepared vegetables covered in the refrigerator until you’re ready to cook. You can also make the curry a day ahead and reheat it gently before serving; the flavors develop as it rests.

What to Serve With Pumpkin Curry

Steamed jasmine or basmati rice is perfect for soaking up the creamy sauce, and warm naan makes it easy to scoop up every bite. Roti, chapati, or poppadoms are also delicious options. For something lighter, serve it with quinoa or a crisp cucumber salad. A little mango chutney on the side adds a sweet, tangy contrast.

Notes

🥡 Storage: Allow the Pumpkin Curry to cool slightly, then transfer it to an airtight container and refrigerate within 2 hours. Store in the refrigerator for 3 to 4 days.
♨️ Reheating: Reheat in a saucepan over medium-low heat, stirring occasionally, until hot throughout. Add a splash of water or coconut milk if the sauce has thickened. Microwave individual portions in short intervals, stirring between each.
❄️ Freezing: Freeze cooled curry in airtight freezer-safe containers for 2 to 3 months. Thaw overnight in the refrigerator before reheating. The pumpkin may be slightly softer after freezing.
💡 Tips: Choose a small sugar or pie pumpkin with firm skin. Cut it into even 1-inch pieces for consistent cooking. Stir the curry frequently while simmering, and use full-fat coconut milk for the creamiest sauce. Curry paste varies in heat, so adjust to taste.
🍳 Alternate Methods:
Slow Cooker: Sauté the pumpkin, peppers, onion, and garlic in the oil on the stovetop for 4 to 5 minutes. Add the curry paste and spices, stirring for 1 to 2 minutes. Transfer to a slow cooker with the coconut milk and pumpkin puree. Cook on LOW for about 3 to 4 hours or HIGH for about 1½ to 2½ hours, checking early, until the pumpkin is tender. Stir in cilantro before serving. The sauce may be thinner.
Instant Pot: Use Sauté to cook the vegetables for 4 to 5 minutes, then stir in the curry paste and spices for 1 minute. Add ½ cup water and scrape the bottom thoroughly. Add coconut milk and pumpkin puree without stirring them into the bottom. Pressure cook on HIGH for 1 minute, then release pressure immediately and carefully. Stir and use Sauté briefly if needed to thicken the sauce. Pumpkin texture may be softer than with the stovetop method.
♻️ Leftovers: Spoon leftover curry over rice, quinoa, or roasted vegetables. Add cooked chickpeas for a heartier meal, or serve with warm naan for an easy lunch.
📝 Notes: Butternut squash can replace the fresh pumpkin. Use plain 100% pumpkin puree, not pumpkin pie filling. For a vegan dish, check that the curry paste contains no shrimp paste. Serve with steamed rice or naan, if desired.
